That's a technique called string damping. I'm muting the A string with the angle of my middle finger and the D string with the edge of my ring finger. It's a difficult technique to do consciously but eventually becomes something that you naturally do all the time when playing.

Em I think you got the F#dim chord wrong... that looks like a D7/F chord
F# + A + C = F#dim. But you could certainly also call this chord D7/F#.
