Chuck Roast Smoked On The Weber Kettle With Scallion Garlic Mashed Potatoes

  • Chuck Roast smoked using simple methods can give you results that will make you think you’re eating Brisket. Using the Weber Kettle and the Slow n Sear with some Pecan Wood for smoke, I cook up a pair of Chuck Roasts and finish them off with some Scallion Garlic Mashed Potatoes.

    Less then 2 hrs ago I was at the store with my wife looking at a chuck roast thinking naa not on the grill, thinking it’ll dry it out. Duh!! Smoke it. I never made the connection, your a life saver Ry!!

    I love chuck roast, but I’ve always braised it. Never even considered smoking it. I’ll definitely give this a go.

    Greetings Ry, I'm a little late to the smoked pot roast party. I'm doing my first one today on my Weber Summit. I'm following your instructions, I've watched at least 60 videos, you covered all my questions I had from most of the other videos. I don't have a Slow N Sear yet because last I checked they don't make one for the Summit grill. We don't call it a "cheater taste" here, we call it "QA" for Quality Assurance.     Chuck is one of my favorite things to smoke. I've done them on my offset and Smokey Mountain, but I haven't done one on the kettle. That will be next.

    oooooh and mash potatoes .....i just did one of these a 5 lbs one i did it in the toaster oven at 190 degrees for 5 hours man was it good..i just tried a grill mate marinating pouch brazilian some thing wicked good... looks good ry

    I have watched a couple of your chuck roast cooks. I have used chuck roasts for my chili, but the last several years have opted for a faster cook chili and have used ground beef. Pre-pandemic, chucks could be bought for $.4.49 lb. Now days, the least expensive I can find it is $6.79 lb. Not sure it can be referred to as poor mans brisket any more. But they sure can produce a good result. Most recently, I slow roasted a chuck in the oven. Let it rest for a bit, then refrigerated over night. Sliced it the next day and heated the slices in the broth, Put some slices in a hoagie roll added cheese, wrapped in foil and heated in the oven. Sure made some enjoyable beef and cheese sandwiches. I have a pizza shop nearby that also make sub sandwiches. One of them is a steak and cheese. Though they have it on their menu, it is no longer available. I suspect it is because they want to keep all their at the $7.00 price. And they can't make a steak and cheese and sell them for $7.00. I think my at home cost is around $4.00 a sandwich. It is a small sandwich too. Thanks for your videos. Learn something new on many of them.

    Finally smoked a chuck roast today and it came out pretty good! The only strange thing was that I tried to use the drippings for a mop sauce but IT WAS CRAZY BITTER! Im thinking it was the smoke from adding coals throughout the cook. Anyways, keep up the good work!

    Why not? Half the time of brisket, at least as flavorful, and often cheaper these days. Just finished the last of the chuckies I smoked for New Years.
    (Sigh, I also used pecan. It's everywhere now. All of the trees in south GA were destroyed by Hurricane Michael.)

    Dang nice looking Chuck. This the 2nd Chuck video I have watched in 2 days. The wife has been wanting a smoked roast so I guess fate say's Smoked Chuck Roast it will be. I really liked the liquid that was sitting on top of the roast as you where pulling them to wrap and that color, WOW...The taters, I made the very same ones with ST Louis ribs the other day. (Does that mean I've watched a LOT of Cooking with Ry videos?) Another great video..... Keep your fingers crossed, Hopefully next week the Cannon will roll.

    One trick I've done when doing the potatoes is taking a clove of garlic, minced, and add it to the water while the potatoes are boiling. Then add more garlic after they are done and mashed with the butter and milk (I prefer using half and half or heavy whipping cream).

      Boil potatoes in whole milk & heavy cream. Roast a clove of garlic. Throw it into the potatoes. Also dry it with German stone ground mustard. It’s flippin awesome!

    Nice job RY! I'll have to give this a shot some day. I just smoked an entire shoulder clod that includes the chuck roast but this is a great way to get more rub and smoke flavor around the entire chuck roast. Oh yeah, mashed potatoes looked so deelish too.👍🏼

    This looks great! I noticed you use the towel/cooler for resting and in other videos you used a pan covered in foil. Does this depend on what result you are going for? How do you determine the difference between a roast at the end that you slice vs pulled? Thanks!

    Glad to see a recipe that calls for minced garlic. I've never bought fresh garlic in my life, and have always had to substitute. Not for this recipe ha.

    Ry, I’m new to bbq-ing. Did you cut a slit in your kettle for the thermometer cables? Wondering if that’s recommended instead of just having the cables between the lid and the lip of the kettle. Thanks, Jim

    Great video Ry. I really enjoy your videos and i try out some of the recipes wich turned out great. One question: i tried the "towel in the cooler" but i didnt really get the principle behind it. Why not just rest it in the open? Wont the meat keep cooking with all that insulation? Isn´t there a chance that you take it too far and overcook it? Keep doing theese videos - they are a true inspiration! // Erik from Sweden

      It's really about retaining that heat and letting the meat slowly cool to retain its moisture and tenderize further :)

    Ry, smoked my first 4lb chuck roast yesterday. Followed your guide per the video and mine pretty much followed your timeline. I didn't have the rub you used, but I used a "brisket" rub that yielded good results. The taste of the chuck roast was really different compared to a conventional way of doing a chuck roast. The smoke and bark cranked the flavor up a notch. yum. Speaking of rubs, have you used any "coffee rubs"? I can't remember. I got some as a Christmas gift and was curious as to your thoughts on its use.
