Hey you might wanna check out the mod called CHIM for skyrim, its like what your using but the AI is constantly active and can all talk in groups automatically, no having to select AI to talk like with mantella. It allows the AI to interact with the world more, go places, set tasks, convince them to follow you or kill someone else, etc. It would be cool what you could make with this mod! To clarify its CHIM for skyrim special edition on nexus mods, it does have a bit of a setup though.
The part where the storekeep said "Are you sure you can handle a full meal ? Why don't you try a soup ?" That isn't even in the Skyrim internal logic. That's just normal Human logic applied to the Skyrim world, in a very practical sense. I don't recall seeing alot of those moments in AI interactions with people, or maybe it went over my head, unlike this example. That was AI gold.

I was playing the other day when me and Serana found her mother, Valerica, I tried to charm Valerica by telling her I thought she was actually Serana's sister. Valerica shot me down by telling me if I wanted to charm her I'd have to come up with something more original. We went on to defeat the dragon, after which Serana remarked that we'd done well, but that the highlight of her day had been watching me trying to charm her mother and failing miserably.
I forgot the name of the AI Brainfrog uses and I havent watched this video yet, but from other vids I can tell Brainfrog has some really good AI, think its called Mantella or some shit

Based on everything I've heard/read about LLMs, the AI doesn't actually know that. It just "guesses" that reaction based on the ridiculous amount of content it's had and the current "conversation" with the player. Basically, a pattern-recognition machine that read more books that a person can in a lifetime, then puts out the expected output from the pattern and the available data. And advanced LLMs that typically use more powerful hardware and more VRAM typically can respond like that, sure. But tying it into the game in such a way that it would cause a status ailment, for example, is another matter. (It's possible but requires integration with the mod and compensating for when the AI hallucinates or hits the token limit and such.)
It is very rare to find unique Skyrim content nowadays This stuff is very good and very unique. Earned a loyal Subscriber my friend! PS: I lost my shit at the end

Are these real? Like obviously the footage is cut together to make a cohesive story and certain events are set-up, but can you actually have that level of gameplay? Like could I form a group and send them out on quests or to spy on people? Could I declare war on a hold? Can you actually do little "unofficial" jobs for NPC's and have them pay you like in the video? This is probably gonna be the future of gaming and I am so f****** excited for it.
The gameplay interaction is limited atm, you would need an engine designed to interpret take direction from the LLM. Which I think is an engineering nut to crack. So no rn they can’t like go out and come back. But they can do a lot of things the mod reads a lot of information from the game, such as what the player is wearing, holding where they are time of day the weather etc. and they can also follow you or fight you purely based on context of your conversation.

The problem is that the LLM's aren't currently deterministic so they can't plan in advance and make complex decisions accordingly. They can decide somethings for themselves, and if you use the more advanced AI mod CHIM instead of Mantella, they can take some simple actions accordingly, but nothing as complicated as what you're suggesting.
If Skyrim VR had multiplayer, with Mantella, the immersive NPC's mod and preferred follower mods, you could make many different shows or movies with a real cast. You could do Skyrim Night Live sketch comedy. With a 4-5 player team of Chadvars, the chaotic possibilities are off the chart.
