Most Indian recipe videos are missing the critical preparation technique of peeling and de-seeding the tomato. This is because the fruit is from Mexico and is relatively new to the Indian subcontinent - maybe 400 years or so. Alternatively, just buy a high quality tomato paste which has all the seeds and skin removed and is already cooked down. Add in the onion masala for 6 mins and voila - your belly will thank you! Or you could blanch peel and de-seed tomato in advance and freeze. I do this sometimes when in season but honestly the paste provides a great consistency as all water has been removed.

I have often made some of your recipes and enjoyed serving them to the family. Regarding Keema Pav and how it is served and made by Irani café in Bombay, I believe they don't use tomatoes in this keema. Please correct me if I am wrong. Nothing wrong with this delicious keema pav, just wanted to know comparison with your recipe and what is being served in Iranian cafes
