    Good to see your take on mchicha, I am a zambian who has been around lots of East Africans, normally they use Amaranth leaves to cook muchicha, we also use amaranth in Zambia, but in my tribe we call it bondwe and prepare it differently from East Africans. I will be trying your recipe as well.

      Congolese eat lots of amaranthe too. And we call it Ndunda in Lingala or bitekuteku in Tshiluba, my language

    I'm from a tiny island in the Caribbean. We use coconut milk in our cooking as well. what is new to me is the first meal on the plate. I was smiling when you tasted. God bless. Been a subby for a while now but hardly comment.

    I like the spinach in coconut milk and it's preparation and the combination of the bell peppers you added, pairing it with that white rice and beans is wow and I can see you really enjoyed it.

    Back with some feedback. Cooked this today and ate all of it as a main dish. I opted for New Zealand spinach, which is somewhat chunkier, and leek. Had to take the peppers out (can't digest them). Instead of pickling the veggies, I added some rice vinegar while cooking. It came up glorious!!!! Thank you dear Nanaaba, I will be cooking spinach this way in the future. Amazing vegan recipe.

    The Swahili dish is commonly found in coastal part of Kenya. Swahili dish is always full of flavor and very rich. Most of the dish is always added coconut milk❤🇰🇪🇰🇪.

    Sister Madam; this dish is similar to a Trinidadian dish called callaloo which uses fresh coconut milk, and pumpkin instead of carrots then blended with a swizzle stick or in a blender. There is no pickled veggies, but it is delicious just as this looks. The spinach is usually dasheen leaves.

    Wow I love the recipe. But mchicha (also called terere) is a very different vegetable from spinach. It cooks for long as it's fibers are a bit tough and has a somehow sweet taste.
