  • GLUTEN FREE SPONGE RECIPE
    In this video I show you how to make a gluten free Victoria Sponge :)
    This cake has the same texture as a "normal" sponge and it tastes pretty much the same too. I give this to my family and they never know it's gluten free. It's very simple to make, in fact, it's exactly like my normal Victoria Sponge recipe, you just need to swap out a couple of ingredients for gluten free ones and use a secret ingredient - xantham gum! (Not so secret now I've told you 😜)
    Ingredients:
    Weigh 4 eggs and use that measurement for the rest of your ingredients. My 4 eggs came to 270g so:
    270g gluten free self-raising flour
    270g butter
    270g caster sugar
    4 large eggs
    1/2 tsp gluten free baking powder
    Just over 1/4 tsp of xantham gum
    2-3 tbsp milk
    300ml double cream
    Jam
    Icing sugar for decoration

    I just made my first ever Victoria Sponge using your recipe. I was skeptical when you said wont’t be able to tell it’s gluten free, but you were right. It’s the most delicious gluten free cake I’ve ever tasted. Thank you so much for this!

    can i 1/2 the recipe to make just 1 layer ? would that work...

      Hi, yes that would work! 😊 The only things I’d be extra careful on is the quantity of xantham gum as if you put too much in the texture will turn kind of sticky. Also as it is a smaller batch, just take care not to over mix it. Hope that helps 😊

    You should wear catering gloves when decorating instead of scaping you finger on cooling rack in hygienic

      Washing hands regularly is just as hygienic as gloves (in fact sometimes gloves can be less hygienic if not using them properly) however, my bakes are only ever for me so I don’t wear gloves and just wash my hands. If I do bake for others, I wear an apron, masks and gloves.
