  • I'm at a new distillery! Hello from Boothstown Gin at the Coal & Cotton Pub in Manchester.
    In this video we're making strawberry gin in a copper moonshine still with a thumper keg. We'll be using the single shot distillation method to make our strawberry gin, which means that the distillate is diluted with water only. By comparison, in the multi-shot distillation method, the gin concentrate is diluted with both neutral grain spirit and water.

    Cool idea! I'll run this in the autumn with wild alaskan berries and juniper.

    Obviously, this is a new venue in Manchester. Moving from Shakespeare Distillery to Boothstown Distillery. A smaller scale setup. Looked like an experimental rather than a full commercial establishment. Are these products only manufactured to supply the consumption to the pub next door? Inspired video with detailed explanation. Enjoyed it. Look forward to seeing how the multi-shot distillation method works in the next episode.

    Guestimating the ingredient amounts, I made some of your strawberry gin! :)
    I useed too much strawberry essence but it's settled down ok after a couple of weeks. Next time I'll use half. The wife loves it though. :)

    Have you ever charged the thumper itself with botanicals/NGS? And if so what was the outcome or pros and cons?

      No, I've never done either of those things. I guess with the botanicals, if you put it in the thumper you might get more oils from them passing over into the final distillate and then it would be more likely to louche. I think you could get really nice + different flavours from putting the botanicals in the thumper though, so it'd be nice to try it out.

    Isn't that a lot of heads for using vodka that has already had the heads taken out?

      it is quite a bit, but it depends on the flavour too. That's just how they do it there.

    • Is the column above the onion packed/cooled/both. I’m guessing only packed because you want the thumper to heat?
    • Also was the muslin bag added to the was to macerate during the boil or secured above for vapour infusion? Looked like he tossed it in!
    • If they are using bottled vodka that seems like a large amount of heads to collect for a product that’s already been distilled for consumer supply, it’s good practice but potentially overkill.

      Hey! the column is neither packed nor cooled. The muslin bag was added to macerate during the boil.
      I am currently in Canada, there is a bit of lag time between when things actually happen and when I post the video. The time difference is about 2 months now.

      @@MissBrewbird Thanks! Yeah we're going for the full distiller's licence and I just got the 12,000 word 60 page Business Plan done. A few other docs and forms and we're ready to rumble. Fingers crossed HMRC takes us seriously. If we get the licence we'll be the new smallest distillery in England :D

      @@tonyoliver4920 Yeah you need so much documentation to prove you're serious and have covered all the bases. Our application that went to HMRC last week weighed a kilo! was an inch thick of paper with Business plan, CAD drawings, photos, risk assessments, forms and letters of intent from customers waiting on us. Hopefully they accept it but if not we'll go for rectifier's and then reapply in a year for the full distiller's licence again once we've proven ourselves. The difficult part is getting all the permissions for what is effectively a converted shed!

    50 mls per litre !!!! 1.25 litres from 25 litres !!!! That is a massive heads cut ? or am I doing the wrong thing ? If I make a sugar wash I often only take 50 mls for a heads cut for the whole 25 litres ?

      50mL/litre is probably a bit overkill since we were using bottled vodka as the base. The vodka has already been through so many distillations before it gets bottled anyways. However, if you are distilling a sugar wash do you do a stripping run and then a spirit run? Anyways, in either case that seems extremely low for a heads cut. I'm surprised it doesn't taste and smell solventy at that point still.

      I tend to agree Brendan. With a 15 L batch I find the first 50 mL can be a little oily and carry a strong juniper taste but I don't like to cut much more than that. We use an NGS from a reflux still.
