    Sa breadmaking Ninong pag niluluto ang dough or subjected to heat before the actual cooking/baking, usually it is to make the bread last longer and to make it softer by way of starch gelatinization. Parang yung Pita recipe mo which the flour is mixed with hot water kaya mas pliable sya even after cooking and hindi sya mabilis mag dry out. Hope this helps. :)

    My favorite Ilocano snack (BTW Ilocano rin ako).
    Actually there are 2 types of Ilocos Empanada - Vigan (Ilocos Sur) and Batac (Ilocos Norte, which is the original).
    Classic versions share common ingredients which consist of monggo (Boiled and/or toge), papaya, longganisa, and egg. Another similarity is sukang Iloko ang pinaka sawsawan nila.
    Pagkakaiba naman nila, yung version ng Vigan is lighter in color (yellowish), and Vigan longanisa ang primary protein. The Batac version is yung mas kilala natin orangey ang dough, and Batac longanisa ang filling.

      Ketchup ung sa norte eh, nagtataka ako kc noon ng ask ako kung may sukang iloko sila eh wala nmn... But that was years ago ah, mga 2000-2010s. Ilokano din ako and from vigan.

      @@pauljohn8120 actually boss yung pagsawsaw sa ketchup, medyo bagong "tradisyon" na lang yun. Pambalance sa strong flavor ng suka. Pero tama, yung Batac version ang nagpauso ng paghalo ng ketchup sa sauce (which is yung sukang Iloko).

    As an Ilokano. Papaya is the appropriate substitute for cabbage. (Cabbage) is one of the main ingredient of Ilocos empanada. Just sharing po Ninong😁 pero overall. Great job ninong, nakakatakam haah

    Walang mantika ung dough mixture
    Dapat meron sya sa mixture then sasaw sa mantika before I flaten.
    Plastic up and down sa pag rolling ninong ry para madali at maganda and finish at manipis lang. Parang style pagroroll lang Ng mga sushi pero flat namn

    Hot water pastry pala gamit ng Ilocos empanada. Advantage nyan ay mas pliable sya and it can handle heavier fillings. Much stronger compared to other types of pastry.

    Nong tip lang pag nag spread nung dough bago lagyan ng palaman ang ginagamit don ay oil hindi flour mostly yung ginagamit din na pang prito kaya din oil para mas manipis yung magawang shell and wala syang breaks or butas but anyways ang sarap parin tignan nung mango

    Yong ginawa mo mismo is Vigan Empanada or ung Ilocos Sur Empanada, na hndi na kinukulayan ang dough nya and papaya, egg and khit giniling lang na baboy ang ingredients nya na ang sawsawan nya is sukang ilocos and white onions, at ung isa na orange nmn ang kulay is Laoag Empanada or ilocos Norte Empanada, which is the same as vigan empanada ingredient with toge and ang sawsawan is ketchup. I really Like ung Sticky rice version nyo ng empanada, maybe i-try ko din yang version na yan. Sana Gawa din kau ng iba't ibang potahe namin dito sa Ilocos like Pinakbet and etc. More power.

    Mukhang ansarap hahaha 🤣 Ninong un pong nilagay nyo sa mango sticky rice, 'santan' po tawag namin dyan, meron lahok na asukal ung gata pagniluto. ung 'latik' po kc purong gata lang na iniga, kaya dark na buo buo po sya saka may coconut oil after maiga. Nilalagay po usually ung latik sa ibabaw ng mga kakanin, like sinukmani.
