    I've been working on a bread company here in Japan for almost 2 years now. I know the process even with the help of big machines pero inexplain mo na Ninong Ry yung purposes of ingredients and of every process. Yun na lang kasi yung hinahanap ko para mas matutunan ko makagawa ng tinapay perfectly pag nagmamanual ako. Very informative talaga. Happy Anniversary sayo Ninong 👍

    16:37 I feel you ninong, and isa akong witness sa kung ano ang ibig mong sabihin. Sa higit 15 years ko na palaging tumutulong sa aming panaderya, I always noticed na hindi na sinusukat ng mga panadero namin ang mga ingredients para sa dough ng buns, pandesal and the rest of the breads na pinapaalsa. It's great to see that you made such content, para mabigyan ng idea ang mga inaanak na nagnanais na sumubok na mag bake.

      Kumbaga kasi... Sinusukat nlng ung mga sangkap, base nlng sa kung magkano ung lahat ng nagastos at magkano siya ibebenta para makita mo ung cash flow ng negosyo mo kung kumikita ka ba tlga. Ayan nlng ung purpose ng sukat kapag nag nenegosyo ka ng pandesal or ng iba pang klase ng tinapay.

      Hindi po umalsa or hindi nag bloom yung yeast in 10mins.

    2:17 In flour manufacturing industries, Kjeldall Process is one method to determine the protein content. Protein Contents requires the concentration of %N2 of the flour then multiplied with the protein factor. So, P= Pf× %N2.
    5:18 Speaking of Sugar, Sa brewery, kinakain ito ng yeast at kinoconvert into alcohol(Fermentation Process). And because the concentration of alcohol increases, it also kills the yeast cells.

      @@andreigeronez8383 1 teaspoon. Not too much or you will produce alcohol. And worry not with the alcohol as it evaporates with higher temperature.

    as an ex baker ninong much better kung ginamit mo is not egg wash, margarine po talaga nilalagay ko sa ensaymada at pan de coco. kase po pag eggwash eh lumulutong talaga. bale ilalagay ang margarine sa ensaymada pag malamig na then sa pan de coco ilalagay ang margarine pag tanggal palang sa oven. yun lang nong. hope it helps hehe

    Ninong, yung ensaymada mo is reminiscent of the original Spanish style ensaïmada de mallorca na may pagka crunchy yung crust, parang croissant yung dating. I guess reason doon is pretty similar yung technique sa pag gawa. Relatively lean dough na may kaunting lard lang ang halo, tapos the rest of the fat ipapahid lang din bago iroll.

      @@grindilow hello! normally ang paggawa ng tinapay goes through the following steps:
      1. Autolyse/Final Mix (10-20 mins): basically nagccombine ka ng ingredients at pagbloom ng yeast.
      2. Kneading (15-20 mins): build up ng gluten. Dito ka mag wiwindow-pane test.
      3. Bulk Fermentation (1-2.5~ hours): dito ka na magaalsa or first proof.
      4. Pre-Shape (10-20 mins): nagddivide ka na ng dough dito
      5. Proofing: (1-1.5~ hours): ito na yung last na pag-alsa nung dough. Normally dapat 2-3x na yung size niya. May test usually na ginagawa dito (pinipindot yung dough, dapat di siya magsspring back at hindi siya lulubog)
      6. Baking: last part!

      May napanood akong video, kay Claire Saffitz, gumamit siya ng TangZhong--flour na tinunaw sa milk hanggang sa maging paste. Pampa-fluffy siya ng tinapay. Yun daw ang secret ng Japanese milk bread.
