  • At Heirloom Market BBQ in Atlanta, owners Jiyeon Lee and Cody Taylor serve Texas barbecue with a Korean twist. This combination has earned the restaurant a spot on the Michelin Guide and turned it into one of the busiest restaurants in the city, serving classics like brisket and dishes special to them like a hot chicken sandwich, kalbi beef rib with Korean banchan, and more.

    This is honestly a very fundmentally sound idea. Korean banchan and food in general is typically spicy and acidic due to peppers, fermentation, and aging while southern BBQ is just the best combination of fatty, decadent, and smokey so combing the two just equates to flavor balance. Acid and heat cancels out and balances fat so it's a very well thought out synergy. Makes my Korean-American and chef brain very satisfied, well done chefs 👍.

      Kimchi is spicy and acidic. Most banchan aren't like that. Many of them range from bland to really sweet. The one recurring feature in modern Korean food is not spiciness, it's sugar in everything.

    • @AustinJinLee
      @AustinJinLee 10 หลายเดือนก่อน +58

      @@doryfishie2 lots of banchan in Korean cuisine is spicy but I agree there’s lots of sweet and mild flavored ones. But gochukaru and gochujang are main staples of our cuisine and as such you have all the variants of various Kimchis, 무 말랭이 (dried spicy radish), 깍두기 (radish kimchi), 오이, 콩나물, and 파무침 (spicy cucumber, beansprout and green onion salads), 상추겉절이 (spicy Korean salad), 무생채 (spicy radish salad) etc etc. There are other spicy ones that are stir fried and served hot instead of the pickled colder ones too. The ones you get in those little small serving dishes at KBBQ are a far cry of the ones you will get at more rustic Korean restaurants or in a Korean home. Look up some of them! There’s a lot to explore with Korean banchans!

I tried to give her extra money for it but she kept refusing so I just left it under my plate.

    Oh my god, I remember Lee Jiyeon. She was a famous singer from the late 1980s through the early 1990s. Her name brings back so many memories of that time. I didn't know she lives in the States now. It's great to see her in good health and success. Wish her the best.

    I love this! Such a smart concept! While I love American Southern BBQ for what it is, most restaurants around me lack variety and TEXTURE in their sides! I love KBBQ cause there's tons of crunchy, flavorful, sour, acidic, sweet sides haha. Southern + KBBQ must be smashing!

    I’m vegetarian but I’ve always loved the idea of Southern X Korean barbecue fusion on paper, I never thought it was a thing, and I’m so glad it’s a thing. As much as I personally don’t eat meat, I’m happy for the people that have experienced this

    Easily one of the top "must eat" spots in the Atlanta area. Anyone hitting the top BBQ spots around here would have to include this one. Buried in the story may be how amazing the Burford Highway Farmers Market is. Come to ATL for a long layover and hit these 2 spots. You won't regret it (may hate the traffic though 😏)
