If you are using sendgrid your tracking will be inside the sendgrid app for open rates, ctr and bounce rates. As per GHL support the connection is not fully established for them to track it accurately. I would recommend using the Dedicated domain inside GHL to have better analytics, and delivery.
After you create this automation workflow, where do you see the e-mail open rates and click stats? and does this only work when using sendgrid?

Does the email tracking feature monitor opens and replies for 1-1 emails?
Do you mean 1-1 emails via the contacts section?
Or is it via an automation or via campaigns?
If 1-1 via contacts section then it does not track it.
