Just made this tonight. Even though I didn't have the Xamayca and had to sub Hamilton Jamaican Blonde, it was one of the top Mai Tai's I've had. I see why it is named Ultimate! Cheers!
lately I have been using 1 ounce of appleton 12 ,half ounce SC and half ounce hamilton 86,I really like it. I am also starting out after getting these brands, and am excited to try more!

will definitely try it, but with some modifications as I don't have Plantation Xaymaca nor Appleton Estate 12 but I have Appleton Estate Signature & 8 for substitutes !
I tried it tonight with a couple of slight variations (Clement vs Dry Curacao + Appleton JD Cask vs. Signature because I could not find it in my bunker) but it definitely does rock!

Amazing video once more! I prefer mine with no S&C and 1oz appleton 12 instead. What surprised me most is the demerara, I presume this is in part to balance out the fire of the S&C.
I cannot make a mai tai with industrial syrup anymore, after making my orgeat myself, it just ain't the same.

I am in the same boat so subbed Appleton Estate. Still works amazingly well. My second favorite at least until I do a taste test against my current 50/50 split between Appleton 12 and HSE VSOP. Have a feeling this one May win out.

I recently made a Mai Tai with 2 oz from my rum infinity bottle containing 26 (!!) different rums. It was absolutely incredible. If you're into tiki drinks and rums, I highly recommend starting an infinity bottle.

@@jacobmoux5235he just mixed all the little morsels of rums he had into one bottle! It's like a perpetual stew, but with rum!
@@admiralstiffplank morsels is the best description I've heard so far lol. People usually says dregs, but morsels sounds much proper. I got one going now with about 18 bottles!

Appleton 12 was my first bottle of good rum along with JWray Overproof. Purchased them to make my own Mai Tais when I moved out for uni (and couldn’t afford cocktail bars).

1 Appleton Estate 12
1 Pusser's Gunpowder Proof
1 Lime Juice
1/2 Cointreau or Clémont Creole Schrubb
1/2 Orgeat
1 Dash Black Walnut Bitters
A tiny pinch of salt
I personally don't like the bitter aftertaste of Smith & Cross and Xaymaca but I understand why some do.

I've tried this rum blend, tried the Tropical Standard mai tai, tried a mai tai made by Martin Cate with the Appleton 17 Legend and many more. This blend has always seemed way too busy. It has never felt to me like all four rums used here are necessary. The Mai Tai should be rum forward, but the rum and/or rum blend should be simpler and more elegant. I've found in my tests that Plantation Xaymaca with a bit of Smith and Cross gets you easily across the finish line without the blended rums that use a lot of pot still distillate.
Thanks for sharing your experience. To clarify, do you run with 1.5oz Xaymaca + 0.5oz S&C.
As is I bet this would be incredibly sweet (all inclusive resort levels of too sweet)... To my taste, I would remove 1/4 of the syrups and ad at least another 1/2 (or 3/4 oz) of rum... Great series!

So when I make my Orgeat, I use Demerara sugar instead of regular granulated sugar. Would this make the Latitude 29 Orgeat redundant?

Thank you! In this case using a Demerara syrup would be redundant and instead would want to use a simple or rich simple since your Orgeat will bring more Demerara than the recipe calls for. Overall just a little detail as the main star of this one are the rums.
Latitude 29 for sure is already richer than 1:1 simple syrup. But depending on the taste/flavor of your orgeat you may not need additional sugar.

Is there any real variation between using clement over ferrand curacao? (I believe Kevin’s recipe uses ferrand)
They taste much different. Neither is going to make or break it or fundamentally change drink, but you’ll notice it.

Probably either a real island/Hawaiian Mai Ta with a split base of light Puerto Rican rum and dark Jamaican rum or a moderately aged Puerto Rican Rum (Bacardi 8, Don Q Gold)
Is it rude to ask a bartender at a tiki bar to substitute spirits in my cocktails? Should I just stick with ordering a Mai Tai the way the bar makes it?
Not rude. You're the customer and you're paying. You can always ask for a certain drink to be made with a certain spirit but be prepared to pay more for it. Usually they're using a specific rum or rum blend in the drink for costs purposes. No guarantee everywhere will oblige, but it's def not rude.
