The only other alternative is to say "him or her" which is kinda awkward. It is grammatically fine to use "them" for a singular but it is not often taught due to the confusion it causes students when their grammar knowledge is new and fragile. It's better to get a firm understanding of the basics before exploring these ideas.

It's possible, but it's more common for natives to shorten and blend the would + you in those cases. So, instead of saying "Where'd you like to go?" I would more likely say: "Where wou'jya like to go?" (IPA: wʊjɑː , a contraction of would + you). Your example, "What'd you buy?" sounds more like a reduced form of "What did you buy?".
