When we talk about someone but don't know the gender, or the gender could be male or female (maybe I'm talking about a female friend, maybe a male, it doesn't matter for my sentence) then we usually use "them". The only other alternative is to say "him or her" which is kinda awkward. It is grammatically fine to use "them" for a singular but it is not often taught due to the confusion it causes students when their grammar knowledge is new and fragile. It's better to get a firm understanding of the basics before exploring these ideas.

It's possible, but it's more common for natives to shorten and blend the would + you in those cases. So, instead of saying "Where'd you like to go?" I would more likely say: "Where wou'jya like to go?" (IPA: wʊjɑː , a contraction of would + you). Your example, "What'd you buy?" sounds more like a reduced form of "What did you buy?".
If I were Alisha, I would never stop teaching English on TH-cam!
