Usually if a yeasted dough seems heavy and dense after baking, it's down to the mixing and kneading stage. It can be caused by under mixing, over mixing and also incorrect proofing as well. There are lots of reasons and science behind to do with the gases that develop from that process. I've done this twice now and each time the dough is dense and horrible. I'm following the method and doing what your doing, but it's not working for me 😢
