As a mead-maker: there’s a real risk of botulism that comes from adding baking soda to mead. Ordinarily the honey and the mead are too acidic (below 4.5) for the botulinum spores that could be in honey to reproduce or make toxin, but when you add baking soda to raise the pH to counteract the preservatives in the soda, you raise the pH to a high enough level that there is a botulism risk
Then how would you use yeast to ferment if u don’t counteract the preservatives?? People have been making mead for hundreds of years and you can look up how much of a risk it really is. Really low

You inspired me to make kimchi and I started making mead because of Golden Hive. My fav flavor combination so far has to be mint and mango, but hibiscus and a NA berry blend is a close second. Glad to see my two favorite ferment TH-camrs have some crossover!
fun fact: that drink can be used as a feeding liquid for growing skin cells in a lab without chaning anything but if you neutralise the acidity of it it works even better
I presume Johnny is very aware of this but for anyone copying him, use bicarb soda, not baking powder, to raise pH, and don’t raise it all the way to neutral. You want to keep it acidic - will help prevent botulism, taste more fresh, and be less salty
I never thought of filling the bubbler with sanitizer. I don't think it's necessary in most cases, but if you've had problems with mold or rancid brews (like my brother), then that might be a really good idea. Thanks for the thought.
Duuude! I love pocari sweat!! I tried it for the first time at a seven eleven, thinking I was just getting a normal bottle of water, but then I was surprised when it tasted sweet!then I found out it was a sweetened electrolyte drink, and I was conflicted. Now I love it.
Would recommend mixing your yeast with a few ounces of warm water until they start to bubble before adding them in! Will ensure more initial yeast survive and rehydrate and they will have better starting conditions!
You said you added baking powder to increase the PH, did you perhaps mean baking soda? Baking powder won't change the pH much since it contains both an acid (usually tartaric acid iirc) and baking soda (it's meant to make cake batter foam up without adding changing the flavour)

Get your sugars (sugar or fruit), combine with purified water (more fruit makes sweet, less sugars makes dry), and add yeast. Basically forget about it. About a week if you use kveik maybe. But could be a couple of weeks. If you use baking yeast, it will work but get ready to taste dead yeast. Learn about siphoning like he does in the video. Test your gravity if you care about specifics… but I drink 375 ml vodka almost every day. so I don’t care what this honey water has for alcohol content but it goes well with supper 😅 if you make it very strong wine like, I recommend mixing it with hoegarden or a citrus wheat ale. Especially if your mead is sweet. (Mead being only-honey wine, no added extra sugar). So delicious, a wonderful treat with at a barbecue

If I remember correctly, I've heard people liken the taste to artificial grapefruit flavouring. Also, given the amount of sugar in Pocari, Aquarius is often drunk instead Been a while since I've drunk both, but I much prefer Aquarius as the sugar often makes my entire throat sticky from all that sugar, but Aquarius just feels perfect

That was my reaction when I saw the pH raised too. Yeast doesn’t mind a low pH, bad bacteria don’t like it. Don’t add baking soda. Keep the pH down.

Plus the PH would change during fermentation making it unhabitable to most things, plus botulism takes a while to create toxins
