Because without speeding the video up, it would have been longer, and people may not sit around for that long. Besides, speeding it up doesn’t take away the quality of the lesson, and we can absorb the information way faster. If that’s a problem to you, just slow it down.
If I don't like the music I turn off the sound and pay close attention. If the video is too fast, I slow it down using the Settings cog just below the video.

I look at shadows all the time, too. Besides the cast or exposure direction, I look for the reflective colors in it.

That's beautiful but when you use ink I note you use a fountain pen and wonder what ink is in it. My fountain pen ink smudges.
It's a waterproof ink. DeAtramentis document ink.
