I made it to the filling stage, then my fat fingers couldn't make the pleats. Screwed up on like 6....then I made the dough too thin. Ugh. Finally gave up and put it all in the fridge. Pulled it all out tonight and just made pouches ( pouch method is soooo much easier) which worked out fine. Laid them out on a lightly greased baking sheet, covered them with plastic wrap, and froze them...only made 25....but they were bigger and I had half the filling left, so I froze that as well. This really is a project, you know. But practice makes perfect, and I love dumplings, so. Next month....if my ra doesn't flare up. GOOD LUCK FOLKS!

Another thing you can do with the dough, instead of kneading for ten minutes, knead it for 2-3, let it rest for 5-8, then knead it again for 2-3 minutes. I find it becomes smooth that way with less work

I make a fast lo mein dish before doing this and eat that while I make a big batch of dumplings or eggrolls. That way your satisfied and can eat the dumplings for dinner.😊
Use wonton wrappers square or round... N fillings can be frozen for later if you made a big batch. Vegans can use soft tofu . my standard veggies are cabbage chopped waterchestnuts, little onions n garlic. And soysauce ( tamari) . kecap manis from my homecountry indonesia or low sodium soysauce and crushed fresh ginger( adding a little bite to it) . happy cooking. For lumpias or eggrolls add nutmeg( pala) little sprinkle of sugar... No need to write down recipes. Use your tastebuds. Lidah or tongue lol.

Steamed pork dumplings are my favourite food in the world, so to be able to have them around whenever I want them would be great! That's why I'm asking so many questions about storing them. Or is it just better to make them fresh everytime?
Elmari Jankowitz You can't freeze roll, but you can freeze filled dumplings. You can put light flour on trays and leave dumplings on it. After dumplings get frozen, you can put them in bags or other containers, but still need put in freezer. I suggest you finish them in one month. Hope it's useful to you.

I recommend the pork dumplings with light soy sauce, they are very delicious. Vegetarians can try cabbage dumplings.

They are hard to make and timr consuming. It is only understandable. Better have ready wraps and you can create the minced filling yourself
