  • Kadam (also called kohlrabi, ganth gobi, german turnip, turnip cabbage, knol khol) is widely used in Kashmiri cuisine. This round, green vegetable belongs to the cauliflower family. It grows in late winter in Kashmir and is perfect for a simple, warm, comfort food.
    Kadam's leaves are also edible. Kadam has a crunchy taste and also has a lot of health benefits.
    Ingredients:
    3-4 tbsp mustard oil
    1/4th tsp asafoetida
    1 big cardamom
    Bay leaf
    1 finely chopped onion
    6-7 garlic cloves
    3/4th tsp cumin seeds
    1 inch ginger
    2 green chillies
    Puree of 3 tomatoes
    Salt to taste
    1 tsp red chilli powder
    1 tsp coriander powder
    1/2 tsp turmeric powder
    3/4th tsp coarsely ground fennel seeds
    Water
    3 kadam/kohlrabi
    Coriander
