    Gail you did it wrong you were supposed to add the pre made cold brew into the canister along with the nitrous. This way you don't get the weak coffee and flavor of the nitrous.
    Thanks for doing the video though and being honest!

      ?? your are suppose to make cold brew before you actually use the nitrous? or toss the nitrous canisters themselves in with the cold brew?

      @@aaroozz yeah, the nitrous is to add foam to the coffee. but you're supposed to make cold brew the way you normally would.

    One way to accelerate the cold-brew process is to use one of those ice cream makers that slowly spin a mixing paddle. That way, you add agitation to the process and accelerate the extraction. Don't need to actually use the bucket cold, though. Just room temperature water and coffee and let it mix slowly for a couple of hours. Idea for coffee lab: two hours with that method vs two hours just sitting on the counter. Hypothesis is that the one that got mixed should have a bolder flavor.

    Have you tried Yuanyang? It's a 3:7 mixture of coffee and milk tea (black tea with evaporated milk and sugar) that's quite popular in Hong Kong.

    I'm almost certain you used carbon dioxide canisters instead of the nitrogen canisters you were supposed to use. CO2 gives you that weird flavor you were talking about, nitrogen is flavorless. Nitrogen won't bubble like that either because it isn't as soluble in water as CO2 is. Try again with nitrogen! I've done it and it works great.

      ackthbbft definitely could be. I just tried to make nitro cold brew with a whipped cream charger. Poured as 95% foam.

      Andrea Vega it’s been a while and it was a failed experiment in my books. I can try to run a test later this week, but no promises. Also, I only have N2O cartridges atm

    Gail did everything correctly. This process is to make cold brew coffee, fast, not a nitro cold brew beverage. The coffee made in this video would then go back into the cream whipper and charged with an N2 cartridge. Nitro Cold Brew should be made with N2 gas, not N20 gas. N2 gives a superior tighter bubble and finer head to the beverage.

    Could you address the issue of cleaning and the accuracy in calibration of grinders and espresso machine? When I watch your videos (and I watch them all), I begin to think 'i could do that' or 'i should save up for the grinder, etc.), but then I realize I wouldn't do it if I couldn't do it well. Several things stop me: calibration of the grinder and the water temperature, and how to clean them. If cleaning isn't easy machines will get dirty and I will let them sit and go out for espresso. If callibration must be done every so many pulls, it might not get done after the first time. Michael in Ojai.

      Michael Bube calibrating water temperature is a non-issue for the vast majority of machines. Look for one with pid temperature control and auto purging and you’ll never have to give it a thought. Calibrating your grind can take some trial and error but after you’ve got it calibrated, it doesn’t change much from coffee to coffee or freshness, just a little meaning a quick adjustment if you need to. Cleaning a grinder is fairly easy and there are products, like grindz, that make it painless. Cleaning and maintaining an espresso machine however is a task that you need to do a good job of to maintain good flavour and longevity. Most of the cleaning can be done immediately after brewing as part of your brewing ritual. Budget dependant, I think the Breville Barista Express is a great starter machine. Or the Breville Infuser if you already have a good grinder.

    using a french press (regular ratios of coffee and liquid) boil coconut water instead of regular water and brew with that! interesting flavor with a touch of sweetness

    Try a hit of the nitrous (laughing gas) if you're feeling adventurous, it makes you really silly and giggly and zoned out for a minute then it's gone. Pretty fun just don't do it too many times or you'll end up like Steve-o

    Those looked like CO2 cartriges, not nitrogen. That could explain why it looked carbonated, which isn't the goal. It should be nitrogenated. It shouldn't be fizzy like that.

      Well to be fair, the cartridges themselves look identical. But that type of bubble is definitely a CO2 bubble. N2O bubbles look sort of.. creamy. And using 2 cartridges seems excessive, might explain the off-taste from the gas.

      I make an awesome cold brew in just 30 second!!
      using my espresso machine, I fill the water tank with very cold water, then pull a double shot immediately when turning the machine on so that the heater won't get enough to heat the water.
      you may then add more cold water and ice, and also enjoy a wonderful crema ...

    I think you can get just plain nitrogen cartridges for those.... I would be interested in seeing if you could put standard cold-brew (already made and filtered) in and make it a nitro-cold-brew. A good lab experiment maybe?

    what if you used a high power blender and cold water to do a very quick cold brew? the agitation from the blender should help extract more from the ground coffee much faster.

      I think the blender would grind the coffee too finely and you'd get a muddy, over-extracted brew.

      Yup,
      Agitation is a good method for accelerate the brew, but you'll need a good filtration for that as it'll be less clear.

    How much do these cartridges cost? And what's the explanation for the shorter steep time?

      You can find a pack of 10 for about $20, so kinda pricey. The pressure inside the canister helps with the faster extraction process. :)

    Nitrogen won't carbonate. Carbonation occurs when using carbon dioxide cartridges. Nitrogen will force an infusion process by taking up the empty space in the whipping siphon and pushing the coffee into the water...

    To make nitro cold brew you need to use N2 not No2.
    I bought N2 from cream supplies ltd in the UK.
    Have been buying from them for a 2-3 years never had any problems with them.
    cold brew should not be carbonated.
    Why does it need to be rushed, quick cold brew?
    take your time. the purpose of slow is to get out maximum coffeeness without the bitterness.
    Take your time let the flavour develop use the right tools to turn it into NITRO COFFEE NOT CARBONATED COFFEE.
    Having said that all experimentation is useful and fun but NITRO is not CARBONATED!
