I wish I could buy them ready prepared for stuffing. Call me lazy, but the preparation is often a pain in the arse. Usually I stick with kidney and liver because they're much easier to work with
Anything good requires a little input for you to appreciate it.
Love you my fellow Irishman but always cut against the grain to keep it tender. Otherwise love this.

Hearts are not appreciated enough.
In America cocktail skewers are called toothpicks.
So, they call the item after it's secondary purpose?
I call toothpicks crowbars. Will be having roast lamb hearts and shanks with parsnips, onion and capsicum tomorrow night.Greetings from Australia.

The roast version is exactly as my mam would cook. I Need to try the steaks!
Well worth a try. I only came across a recipe recently. Tried them twice. Delicious. Don't overcook.
You cut away the best parts of the hearts and wasted them.
You know, you can leave them in when you cook hearts. Free country.
Would be far better if cooked in gravy with some of the stuffing in it. Requires 2 hours to cook.
2 hours ? Don't think so. But you cook them your way.
