was your coffee on the bitter side? I've followed Matt Winton's brewing process (5-Pour Process - from the grind down to how the water is poured) and I'm getting a bitter coffee.
Bitter coffee is a result of too fine coffee grounds for dark roast and temperature too high for dark roast. Yes, dark roast needs coarser grind and lower temp.
Is your tap water soft?
I'm not really sure but the faucet has 4 stages of water filter system
