I would leave more space to rise, and do a second rise before baking. It will result in a fluffier, lighter inner texture. You can form around a big glass (or foil ball) and leave 2.5cm around the edge, then replace glass with a smaller one inside too. An hour rise would be best, but even 20-30 minutes will make a huge difference.

Agreed. That way it will resulted in more fluffier bread. The original, as for me, looks more like cake texture.

A nice creative spin on regular bread. I’m going to give this a try. I’m going to try to make it in angel food cake pan and I’m also going to replace the parsley with dill.
Rosemary and roasted garlic is a great combo as well (you have to be careful with the amount of rosemary because it can be a bit overwhelming if you use a lot)
