I'd never heard of the bread/marshmallow trick until this video and I've been busy making cookies all weekend to send to friends and family 3000 miles away in PA so now I know they can arrive reasonably fresh. Gracias.

Would you put gingerbread or peanut butter cookies separate? They are such strong flavors and scented.
One question, does the Genovesi cookies have to be refrigerated because of the custard?
I would because of the eggs and milk. Hopefully she'll answer because I want to make them but I'd need to know how long they can stay out and what's the best way to store and warm them back up... 🤔
I would prepare them and then put them in the fridge/freezer and only bake them off as needed/wanted. then, don't have to worry about how long they last after baking.
@@slugbiker Yeah, fridge would be fine but I'm not too sure about the freezer. The filling is very similar to a pastry cream. From everything I've read/heard you can not freeze pastry cream. If you know different can you please give me the link to one you've used that can be? I'd really appreciate it...

Are these recipes in any of your books?.
Erin hi,l go to a cafe in Australia l always have their passion fruit mousse meringue cake. I have never been able to find a recipe, so l made my own with a feather light sponge ( made with custard powder corn flour etc. no plan or self raising cake flour) l then make a passion fruit mousse to put in the centre between layers it has just two layers and then the whole sponge is covered with meringue and touched. It’s yummy but I’m sure if you made it, the cake would sit better the the meringue would stay. Firm in the cake for a couple of days where mine started seeping into the sponge and disappearing after a couple of hours, do you have a recipe for this the cafe in Australia Victoria is called Shingle Inn

Yikes. Hot food should never come in contact with plastic wrap. It releases harmful chemicals into the food. Wouldn’t parchment paper or a Pyrex baking dish work? Otherwise, it’s a great video, much appreciated.
That is to prevent a film from forming on the surface of the custard. You could use a dish but the top exposed to air has to be "skin tight" with plastic film or a lid or something. Supose you could use some sort of silicone if you had something like that.
I love the show, but please, stop de 52 change colors! It's too distracting!

I'll be honest - at first, I thought the outfit was some sort of clueless white woman problematic Aunt Jemima reference until she explained she had an apron over pajamas for Christmas. I mean, it's plaid pajamas, you don't need to protect them with an apron and then it would be more obvious that they were sleep clothes and then it makes a bit more sense why there is a bandana too. Cookies looked delicious and I loved the tips.
But...semolina IS flour. Just made from durum wheat.

Merry Christmas @godisgood678! There are many holidays that occur this time of year including some which predate Christianity. They include Mawlid al-Nabi, Advent Fast, Bodhi Day, Las Posadas, Winter Solstice, Pancha Ganapati, Chanukkah, Christmas and Kwanzaa. Saying Happy Holiday shows respect for people of all religions, not just yours. Kudos to Erin and Dan for opening your hearts to everyone this holiday season!
