They are very thick and hard cut. Next time I’ll try the microwave first. I ended up having to use a meat cleaver to get through the skin. The seeds in the one I tried were attached with a lot of stringy like fiber that was hard to remove.
DO NOT PEEL (unless you are going for a fancy and refined dish) !!! the peels of all fruits or vegetables contain important nutrients that should not be wasted. additionally, even the remaining soil on the plant contains all kinds of antioxidants - farmers in medieval Ireland had stronger bones than the modern day human, which was proven to be directly related to not thoroughly scrubbing the dirt off of potatoes. This is all of course, assuming you are purchasing from smaller scale farms that don’t use carcinogenic pesticides/herbicides/fertilizer/food coloring/waxes. even many organic brands still make use of these chemicals^ - they can still qualify as “organic” because they are LESS carcinogenic than other non-“organic” chemicals. I am happy to answer any questions people have :)

Wouldn't you lose a lot of nutrients by microwaving this??
Not really. Some nutrient loss but it will lose nutrients being baked in the oven too.
