    Absolutely amazing recipe. Only thing that chilli and ginger paste in the batter makes dhokla a little spicy for people who are used to less spicy food.

    Loved ur recipe.. I am a big fan of ur's mam and used to watch your cookery show with sudhanshu, when i was young.. I always go to ur website to look for good recipes. I have also downloaded few apps of your's on my Ipad and they are too good.
    Can i subsitute fruit salt and citric acid crystal with cooking soda with lemon.

    Nice reciepe..kya semolina dena jaruri hai?baking soda use kar sakte hai?maine jo dhokla banaya 10 min steam hone ke baad upar se fat gaya...magar andar se nahi paka tha..

    There is difference between the ingredients told in the video and given in the description box and different in the process explained in text. There are 3 to 4 versions in all. Concerned people please look into it .

    Hi madame, Here in the US there is no Eno fruit salt I tried alka-seltzer tablet instead is that fine? I microwaved it instead of steaming it. It came allright but the dhokla was not porous like the way you get in India. What makes it porous ? This ENO salt ? Any alternative ?

    Have a Request , can you post a Video on Making Dahi wada or Dahi Bhalla , made from grinding urad dal . Have been trying since years but they never turn out spongy .

    Exactly fruit salt/ eno kitna dalna hai.??
    1&1/2 spoon jyada ho gaya .. aur pani bhi 1 cup bataya tha lekin bahut patala lag raha tha. Isliye Maine 1 & 1/2 cup besan use kiya.

      1½ tsp fruit salt.
      Or add 1 tbsp.
      Or the easiest is, eno ka chhora packet aata hain.. one time use ka. Utna ek pura daal dena. I do the same.
      Jyada besan liya hain to 1½ packet.

    Tarla Dalal ji was a classic! I made this dhokla for the first time today and it came out so fluffy! I didn't have Eno/fruit salt so added 1/2tsp baking powder and 1/4 tsp baking soda.
    Just a little confusing that the video description doesn't match what Tarla ji is saying. I had to steam it for 15 mins for the dhokla to be completely cooked in the middle.

      Hey..and how did you get hold of citric acid? Anything else to replace it or could we skip it..i don't have lemon either..:-(

      @@saumyasirocco4293 Hi there! I found it at my local Indian grocery store which is owned by a Gujrati gentleman. You can order citric acid online too. If not cjtric acid granules and lemon, check if your local supermarket has lemon juice concentrate (a small, yellow, lemon shaped bottle)

    Hello. I have tried making Dhokra many times but it is uncooked even after 15 mins! Toothpick inserted in the center cones out moist. Please help. Thank you

      Batter ghol lo (don't add fruit salt yet) aur rest karne do batter ko for 20 mins.
      Eno (fruit salt) daalne se pehle paani boil karlo. Steaming hot.
      Uske baad oil lgi hui khaali thaali steamer pe rakh do.
      Iske baad Eno ko ghol ke thaali me pour kardo aur high steam me dhak ke 15-20 min tak pakne do.

    Ingredients listed in description does not match with that mentioned in video . Please correct it . There is a discrepancy in sugar and Eno measurements.
