Its incredibly frustrating as someone who has tried for a perfect run on every course so far to see them have mei's courses be impossible to complete within the time limit whilst also getting all emblems and stats
Nice ones, wonder how people get full five stars though. Also I wonder if they will ever add those slippery slopes to normal maps. Would be a nice addition.
If you look at the leaderboards for the mode people get some crazy scores with 5 stars. So it is possible, don't know if it involves getting all the emblems.

i genuinely dont think its possible unless there is some mei rework coming we dont now about
