It will definitely not taste the same but it won't taste bad either. The sugar usually helps in creaming the butter .. Based on my experience, i would suggest you to soak the dates then blend them to make a paste. This way it will help form the batter. This way, you get a healthier lightly sweetened cookies by the dates. I'm going to try it like this ^^ Hope this will help !

That turned out great! I added a bit of cacao and cinnamon, almond extract and chopped peanuts ❤ a lil too sweet, maybe use less sugar

I will try this to make brilliant idea with chopped dates but for the sugar i must say i will reduce the amount coz dates are already sweet enough
