    I had diabetes for 14 years, in that time I followed their diet recommendations and had my medicine increased by 8 times. Same results in blood sugar and a1c. I got away from all seed oils, and started eating one meal a day, I pretty much only use butter to cook with. The one meal a day can be anything I want regardless of carbs. The first two weeks suck , when you're hungry just drink water. You eventually get used to it, a very small snack every few weeks when you feel hungry during the day. Take vitamin D , it helps more than any meds I got. After 14 years of following their advice and getting worse every year, the one meal a day has me on zero meds and below pre- diabetic in less than a year. I'm also about 45 pounds lighter and feeling as good as I did 20 years ago.

    Our family of 6 lost our only job back in September and our pantry was a saving Grace to get us through until my husband found another job two months later. I’ll be working on refilling the pantry holes this winter.

      We have no car at the moment. Our temperature has been - 10 or lower. We have not left the house in 6 days. Our food storage ha saved up. We have another week before its safe to go outside and walk to the store. I agree. Food storage is a saving grace.

    That whole idea about offsetting future prices by buying and preserving it now is why I started when I was about 60 years old (7 years ago). I realized that Social Security only wasn't going to do it for me. Now I can use what I purchased on sale some time ago and fill in holes as needed at today's prices. It definitely has stretched my budget. Between dried beans, rice, corn , pasta, I can make up all sort of foods, besides my home canned jars. And my %$$& goat barn, which I build by myself except for the roof, now has a non leaking roof on it and it's paid for.

    Thank you Lisa! I have never felt so heard in relating to your Mom. I'm 66 and a domestic violence survivor with a low amount of social security. And a ton of medical issues. Not eligible for any assistance programs ( which i never wanted to be on) due to my name being on the house with my husband. But you know what? I survived that stuff. Started canning again, meat veg and now have a decently stocked pantry. Thank you so much for what you do!

    I have been budgeting since I been 17 years old - 60 years old. My entire adult life and then couple.
    At this age , I said to myself , to have all my debt paid off by the time, I turn 50 years old.
    And avoid having anymore debt . My saying goes like this , "Live within or below my means, just NOT above my means" . I do what's best for us.

    I'm not going to participate in the entire Canuary Challenge this year ... Just one week. For exactly the reasons you mentioned: LOW income, and limited ability to restock my shelves. (Single, no extendef family, $ocial $ecurity, limited space...). Love y'all. Keep prepping, Prep HARD. Head on a swivel.

      Take advantage of 10/$10 (example) sales and don't be afraid to mix and match. This will help you get more meals out of one sales paper. I am on a tight budget to.

      Pressure can frozen vegetables, can a gallon of milk, a 20 lb bag of chicken, can a couple packs of butter, water. All kinds of ideas on TH-cam. I just picked up a vacuum sealer, going to seal rice, beans, sugar, flour. It might not be tons at a time, but a nice assortment of things. Putting a couple rolls of paper plates, towels & toilet under the bed, for a rainy day. If you think of more ideas, let me know.

      @@SandraGagliotti don't waste your money on single use items like paper plates! You probably have a kitchen full of regular plates already. Buy one bottle of dish detergent, a 5 Gal bucket for washing up and a bottle of bleach for sanitation. Work smarter!

    You’re a very smart cookie Leisa! Before I retired, I paid down all debt. Our pantry’s are stocked. Our freezers are full and the freeze dryer is running, non-stop! We just had the generator Our home is paid off. Our vehicles are paid off. Etc. It’s gotta be done with today’s prices. Very scary for my grands. 😐

    A historical note about Social Security because this kind of comment comes up fairly often. When President Roosevelt introduced Social Security in 1935 during the Great Depression it was explicitly described as one leg of a three legged stool. First, people saved and invested for their own retirement. Second, private pensions were supplied by employers. Third, Social Security provided a supplement and backstop agains absolute poverty in old age. It was never meant for people to "live off of" in retirement. Many people never saved for themselves. Many companies stopped providing private pensions. So that leaves the emergency backstop of Social Security.

      That's why dead end jobs,Are no good.Plus have to stay 10 years to be vested. .Hasn't ppl seen, the help nowadays? example is worker's who Leave early,Miss 2 days a week. .. Sure The fast food raised Wages,BUT,they passed the higher prices to the consumer.
      Then they don't get 40 hours,About 27,to 32. ..It's scary ,how They want entitlement,Yet but less work into it.

      Social security is meant to keep seniors out of abject poverty but that's it. Pensions never covered more than 50% of workers and kind of suck because they tied you to a single employer, many workers have found out that they provide less than promised benefits or even none at all and it's all taxable income compared to a 401k that you can roll over tax free into an IRA and then convert to a Roth IRA. Incidentally, a couple receiving social security with a frugal lifestyle and a paid off house can easily live below that, even a modest benefit amount. Then you've got all of the incredible tax incentives for people, especially those with lower and middle incomes to save for retirement...foolish not too as you can completely kill your income tax liability by doing so.

      1200 dollar iPhone
      150 cable internet bill
      Uber eats
      Going out to eat Etc…..
      How you can insure your future is learn a skill or trade. Get an education and work hard when you are young. If you are living off social security you did something wrong.

    IMO 2024 we will have a full blown recession. I think we are already in a Recession. That being said the Wealthy wants a recession. Why? You can buy assets on SALE. Anyways by the end of the day. DOLLAR COST AVERAGING is the best way to Invest. It takes away Overthinking. Always invest LONG TERM so you don’t get EMOTIONAL.

      One of the things I have learned in my 60 years is not to completely move in or move out of investments, if you have quality assets. It is better to trim, and then hold some cash for buying opportunities. That way if things drop, you have some funds to buy in. If things go up, you still have a solid chunk invested. I wish I could take back the times I bought or sold everything in a short period of time.

      was in a similar boat and have just recently stated regular deposits into Vanguard. If things start to look less volatile and I feel more confident I can top it up more then. used to believe that everyone loses during a recession, but some make millions

    Since we cut out refined carbs and prepared foods, since we stopped going out to eat, my husband - whose A1C was 12 - is now not having to take any diabetic medicine and we are looking for his A1C to be less than 6.5. His lymphoma wounds are finally healing and his sleep apnea seems to be less. Fats and proteins are not bad! We eat much more vegies and less fruits. We are saving on our food budget because we're eating less and heating less expensive foods. We're also losing weight and feeling much better.

    Fortunately, we paid extra each month on the principle on our home mortgage pretty much since we built our home. Sometimes it was only $100, but some months it was around $200. This allowed us to pay off our mortgage far earlier than when we retired. A few extra dollars each month can really add up over time, just like a few extra cans of food purchased when you do your grocery shopping can really add up over time. We utilized passive solar principles when we built our home so our power bills are smaller than most. Since retiring we enlarged our garden space, started a mini orchard, got chickens and I went back to cooking almost everything from scratch. I shop sales and buy in bulk when I see a good deal. We preserve everything we dojn't eat fresh from the garden and mini orchard. I grind my own wheat berries for flour. I'm canning beef stew as I'm watching your video. Still have chili to do and then all my pantry shelves will be full. We drive an older truck and car. We try to help others by teaching gardening and food preservation classes at our local collage.

    Most public libraries also have digital e-book access, no charge. My local library tucks a note into each physical book I check out - It says “Today you saved $xx, this year you’ve saved $Xx and throughout your library lifetime membership you’ve saved $XX”. Imagine my delight to see I’ve saved $26,582 by using my local library these past several years. OK, so I like to read!😊

      I use the library too for books and movies. I have a few books I bought recently from the thrift store in case I am snowed in ( Ohio) but 90% is through our library. We have a wonderful computer system where you can look for books and it offers other books similar same with movies. You Tube has a lot of great movies that are Free. And for those who live in smaller towns that may not have as good a library system as the bigger cities, make time this coming year to go to larger cities for yard sales, flea markets and look for books and DVD's.. our thrift stores sell DVD's for $1.91 I have a large collection of those too.     Anyone else thinking about rounding up trusted folks to start a Soup Club . 4 members per group, 'cause it's easy to make a gallon of soup, everyone gets a quart jar 😊. Meet to exchange soups (and their recipes) perhaps include menu ideas . Just an idea to keep our tastebuds busy .

    I started canning about a year ago, mostly to have convenience meals ready to go. Man I was glad to have them when the tornadoes went through middle TN a couple of weeks ago. Those meals to go were easy to cook on a camp stove and fed my family and the neighbors when no one had power. And having a few things like instant coffee, candy/snacks, and hot cocoa made a huge difference for keeping up morale. I would have never thought of the convenience items without your channel. Thank you for all that you do!

    I have a strong (Nesting Instinct) to put as much food up as possible. It’s like I know something is going to happen. I have been canning like crazy and putting food up, meds and so on.

      During the summer ( May) the city installed a SMART gas meter and notified me they needed to come in and check it out. It really didn't bother me bc it was so hot my water was warm enough for us and didn't need to use the gas. So ,I didnt contact them until the end of October.
      Just from them making that meter change made me realize i could survive 6 mos without gas service.

    Yes! All of this! I have around 500 home canned goods, mostly meat, and a ton of freeze dried foods. Things are only getting more expensive so it’s nice to only need to spend the minimum at the store right now because I open a few jars a week for meals. When I find food on sale I buy then. With 21 chickens I could live off my eggs alone if I had to. Be prepared folks, it’s gonna get bumpy…

      If I had to, I could live on eggs from my chickens, vegetables from my garden, and rice and beans. I've been doing a lot of stress canning lately, so I have all kinds of fruit, vegetables, and meat on my pantry shelves.

    The unusual thing we noticed recently- Dollar Tree is regularly stripped clean. This may be a combination of supply chain and employee issues but it’s also more people choosing lower priced options for some “luxury” items like seasonal decor

    I’ve been sick with bowel problems- fighting a blockage and diverticulitis. I find that the simplicity of my home-canned foods has been a God-send. Especially “ugly chicken!” Having rice and oatmeal were also easy fixes. Having a well- stocked home-canned pantry was so helpful when I didn’t feel like cooking fully raw meat; putting together simple meals is so easy.

    I work on prepping something daily. Canning, freezing, dehydrating. We have set our heat to 60 daily pulled out the electric blanket for the night when the temperature is set at 50.
    Working on very low to no waste.

    The last 3 years have been a challenge with me not working and having 4 major surgeries. Thankful by the end of the year all medical bills will be paid in full.

      I am doing the same. No air conditioning on during the summer. Heat set at 50 degrees in the winter. Very careful on my spending. Buy only what is needed. Things could get really bad. Plan for the worst hope for the best.

      I keep my heater set at 55 both day and night. When I plan on taking a shower, I will wait until the warmest part of the day based on my phone, then heat the house up to 78 degrees just for the shower. I could not make it without an electric blanket. I have been thinking about getting an electric throw, but I feel it is better to keep moving during the daylight hours than to sit under a blanket.

    This is my 1yr canning. We started a garden then my husband had a massive heart attack. While the garden suffered I did a lot of small batch canning and was able to build a pantry from small batch canning. It’s time consuming but now I have something for those rough times.

      Do you have an Eldersource program. They can get you a counselor to help you find benefits you may be eligible but not know about.
      Finally, check with churches and food banks in your area for additional assistance. Not sure of your disability level, but a little volunteering at a food bank could set you up to get lots of leftover foods. Check out some of "Homestead Tessie" and others like her for tips.

      $23.00 in food stamps is criminal. Most of the people I've heard of get way more than that. Two people that I know, as single women, get $300 (ish) a month. One is disabled and the other is not. Can you get some help from a social worker with this?
      Check Food banks/food pantries/churches anything. Get to know your neighbors if you can. They may be important if you need help.
      As for being a diabetic, I would focus on proteins like canned meats, beans, canned low-sugar veggies and fruits.

      buy a solar generator like the renogy 1000 and renogy 200 watt solar briefcase ----it can run a small fridge for your insulin -- charge everyday--hope you stay safe.

      If you can, you might check around and see if some local churches don't run a food pantry in your area. You don't have to be a member of the church to get help with the food bank. If you don't already utilize the ACP for your internet or phone, you might look into that to save a few dollars to apply to food. I know that our local senior center offers free food that the local food bank brings twice a month after they run their food distribution day. Other people, like me, when my garden is working well, bring fresh produce to the senior center and leave it for people to take. You can research for places. For me, I just type "food pantries in conroe texas" into the search engine and I get a list of places to refer people to that I meet who need a little extra help. I used to volunteer at a church run food bank before my car accident.
      I am adding a couple of links should the search engine you use not give you any results. All kinds of people get help at the food bank. Don't feel bad if taking a little help eases your load. I know the church food bank took donations if it makes you feel better accepting the help. If the following link doesn't work, it is under the feeding america website. If all you get is a major food bank several miles away, like it might say Houston--- just contact that major food bank and they can refer you out to some place, like a church, that runs the local place. All of our food in Conroe originally came from the Houston hub.

    I love reading books also, Im in Northern Indiana and my local library has books on line you can read on phones, tablets,etc. You just sign in with your library card and choose a book, or if being used, select it to reserve it. No cost, No driving to get the book. I love it!

    We eat almost exclusively from my home canned food. I have not counted this year but last year I had over 1500 jars of home canned food and it has saved us a fortune in groceries this year.

    I've been at this for 4 years now. I have 3 freezers.
    I have recently learned how to can meat to get some out off my freezers. I've been growing food and putting it up for 4 years. Learned how to make most bread products and have wheat to grind. I made my own vanilla. We paid off our vehicles. All we have are utilities and our home. I'm doing what I can, but in the back of my mind I wonder is it enough?

    Car insurance in Michigan is monstrously expensive, as the hostess knows. After saving for several months I managed to prepay my policy and take advantage of the discounts offered. It took a lot of planning, but that's one less thing I have to worry about for six months. I'm going to keep doing this as long as I can.

      It hurts to make lump sum payments, but it does save money. I pay for my insurance on both my house and my car in lump sums each September. I save from September to August of each year out of my monthly retirement to pay it in one go. It saves me a couple of hundred by doing this. Together, they are my biggest payments of the year, followed closely by my property tax which is still outrageously high in Texas.

      I'm in MI, too. For the last 3 years I've been blessed to be able to pay my vehicle insurance a year at a time. The savings are as high as 25%. This year is going to be ouchie because I'm adding my daughter to the policy.

If my car insurance is $1,400 per year i put away $117 per month every month and i never worry about not having enough money to cover any of my yearly expenses. This also includes Homeowners Insurance, Property and School Taxes

    Yes, you totally made sense. No worries on that. I'm afraid that your intuition is spot on about this. I am working on getting out of debt as well but it's taking much longer since we have been relying solely on my income (even with working 80 hours per week... No days off in 2 years). Every extra dollar is spent on our pantry (I had to totally start over from scratch in 2020) plus I provide for 8 people so it's taking longer this time around... Totally appreciate everything you do to help us. You and Phil are the best!!

      Check with your state for eligibility for food stamps/EBT. Some states believe if you have to feed a family of seven or more it's to much of a burden on a family. You may be eligible for about 250+ in benefits. Also some states provide mileage benefits and baby sitting benefits and car expenses so you can work. Check for everything you can qualify for. Don't be embarrassed about applying for those benefits. Remember you've been paying into the system for years and you are just getting back what you put in and maybe a little more. Prayers you get some help and relief.

    Good morning Lisa, we are in north central MN and the weather doesn’t like to work with us to get early gardening started. But we work with it,hydroponic gardening to get our seeds going and I have several high tunnels to get ready for this late spring. I have always stacked
    /prep cases of veggies and dog food since I got married in 1979. However about 10 years ago I saw a movie “Contagion “ w/ Matt Damon and something inside me said I need more. Then years later COVID hit and I started to watch you and several other knowledgeable ladies in canning, homesteading, and took your/their challenges. I joined buy the extra 5 can a week challenge, canning challenge, garden challenge etc. in the last 4 years I have become more prepared & knowledgeable, thanks to you and the others. I am learning constantly. My husband and I are 69 and I have been telling any and all who would listen to get ready for hard times again…for many years. Most did nothing, my own children have done minimal or nothing. I am sure I am the mom, grandma, who wears a tin hat. If anything, I am supplementing our retirement, as you say…our ready status is for anything that may come up. And prices certainly are going up up up. If there is a WW3 prices are going to go up even more. 😁

    Started really stocking my pantry in April 2020! I have a great working pantry. We’re taking a cow to slaughter tomorrow for meat. We ordered a hog from a friend and had it turned into meat.
    I’m planning on participating in the pantry challenge this time around. And I’ll be doing Canuary also. I’ve gotta get this down (using what we have on hand).

    I am kind of nervous about 24! Monday off to get gastric surgery so I have been nonstop canning 80 pounds of pork roast $.98 a pound 10 turkeys all 22 pounds plus $.39 a pound (kid works at a grocery store and they don’t make them have limits )and 80 pounds of chicken leg and thigh quarters $7.99 a 10 pound bag plus all the stock I could possibly make which is great cause surgeries Monday and Saturday and Sunday. I’m on a liquid.. But I do still have two children at home and they will have no problem finding food while I am off. We also canned vegetables From our very large garden too so they will be well taken care of by the way they’re adults and they can cook for themselves. but they both work full-time so it just makes it easier. We spent our whole weekend canning all three of us together but I think we have enough food here for an entire year. Thanks to your encouragement. My pantry is well stocked 2020 was a really bad year for us at the beginning of it I told my husband I was feeling nervous and I wanted to stock our pantry. He handed me enough money to get two years worth of food December 17, 2020 my husband passed away of Covid very suddenly and I can’t tell you how we having that pantry has saved our bacon and me and my daughters are constantly canning and putting stuff away because we know how important having a full pantry was when. The chips were down. People stack it to the rafters. You never know what’s coming around the corner. Luckily, however, my husband and I paid off all of our debt the march 1 before he died. I am completely out of that now.

      I was away for Thanksgiving, but put one to thaw out the night I got home. That one isn't getting canned, but I have a second one thawing now that will be... plan on getting a few more while they are still on sale. 😊

      We have three turkeys in the freezer! When the weather is better I want to smoke them and then freeze the meat and make broth after it's picked . Smoked turkey tastes so good !

      Luckily I don’t have any specific dietary issues… however I am also wanting to do a lot less carbs as that just turns into sugar….and after the holidays less sugar as I am on that also now trying to reduce sugar intake… I also do and have for a long time a fair amount of canning like meats….potatoes…tomatoes… can concentrated juices, then add just a small amount of sugar when I open them up…pickles…etc… I will be waiting and watching for your videos always nice to have other suggestions on how to prepare canned meats especially… thank u for all your blogs and the time u spend getting information out…as I find them quite informative & helpful…

    The Pantry Challenge: Here's my thoughts for the people that don't want to eat from the pantry, or don't want to not keep stocking their pantry. As you say, the pantry is there to be used, consumed, and restocked. So try the challenge anyways, BUT keep buying, canning, and preserving things to replace what you've eaten or just to build up your pantry. Put those in a box or bag or somehow keep them separate from the rest of the pantry they are not something you can eat until after January.
    The January Pantry challenge doesn't also have to be a "no Spend on your pantry challenge". If the store has a sale on green beans, get as many cans as you think you need/want. Same goes for rice, beans, chicken, whatever it is that you store, go ahead and get it, just don't put it in the pantry right away (of course if it is something that will go bad, do what you need to do to keep it from spoiling).
    Alternatively, put the date 01/2024 on the cans or boxes or what have you, and make sure that you don't eat anything with that date until after January has ended.

    My goal has been to reduce what I have in my freezers by canning. I just pulled out a roast beef that I had paid $5.98/lb for several months ago. As soon as it thaws, I'll can it. Same with several bags of vegetables. Just bought two more one pound propane canisters for $7.00 each for my Little Buddy propane heater. In upstate NY, it gets quite nippy when there is no heat in the dead of winter. Today, a clerk asked me if I had been away somewhere because she hadn't seen me in a long time. My answer was, no, I just haven't needed much from a store. I am listening, learning and doing! Thank you!

    Our family eats keto/carnivore and I’m new to pressure canning. Just started 64 days ago at age 54! Getting healthy so I don’t rely on doctors & meds is super important now. Carnivore eating has helped many people resolve depression and auto immune issues like diabetes. I’m canning 4 chickens right now as I listen to this video so I can eat if my paychecks have a hiccup.

    Leisa, I home can a lot! However, I home can mostly proteins for elderly parents so they don’t have to cook after a long day of drs appointments, etc. I would love it if you did videos of canning recipes with old ppl in mind…I’m not even sure what I’m asking for here: maybe quasi-meals in jars, or ingredient canning where you take it to fruition of dinner for old ppl?       I do this for my parents. My dad is diabetic, and does better if he has protein with beans fordinner, and otherwise very low carbs. I have canned meats in pints, beans in pints, minestrone soup in quarts (no pasta!), and loads of various bean soups in quarts. Usually Icook it up and add stuff, but my Mom can totally handle opening ajar and heating it up.

    When I had eye surgery. Couldn’t drive and could only see out of one eye and was face down for two weeks. I learned how to live of my pantry for several months.
    The pantry inventory does great. The one thing I have learned is put a date you bought. So when you do your next inventory you’ll know if you have only new dates you went through.

    Wow, this was spot on! I am pretty sure that more will be revealed shortly. Eyes open time everyone. Thank You for speaking up. I am Gluten Free, my family is not. I have to buy double the preps. My options keep shrinking in the stores. That to me is not a good sign. I am a former grocery buyer, and what is coming isn't pretty. The big companies gobble up the little ones as much as possible, and they either ruin the product or remove it. It simply may have been a competitor. I am friends with GF small business owners, and a lot of them are closing doors. Look, really look at you store shelves. How many brands of ketchup, flour, butter, wheat and sugar are there? Have the isles been widened (look at the marks on the floor)? It's eye-opening when you start to notice little things. Happy Safe Canning Dazers!

    I started gardening in my back yard. 7 chickens, 6 fruit trees, (5) 5x10 raised beds, grapes, 10x20 greenhouse, I started meal prepping and counting calories/ went into a caloric deficit of 2,000 or less calories per day. Started hitting the gym a year ago and lost 57 lbs this year, go on walks with and w out my dogs, meal prepping w ground beef and chicken w rice and veggies saves $ and time.

    Lisa thank you. You’re saying everything I was thinking, feeling 3 years ago. We sold our home in the mountains & bought into a Retirement Community that is set up to be our home for ever. It’s been hard on me as I love to cook & they have 5 fine dining and 6 “cafes “ where we can eat 40 meals a month. I make things to augment their food because I cannot eat anything that contains MSG. I’ve started canning because of you knowing you practice save tested methods. & heaven forbid there’s a BIG food shortage I have canned meals to use.😢 & feel better for it

    Thanks for the continued encouragement. Mine started coming together when I finally took charge and organized. That was a monster load off of my mind. No more sitting down with a shopping list, and buying things that I think I need, but do need. I have finally got my 3 month pantry complete. I have a notebook that I write down every night what I made for supper, including the recipe if it's new. It gets a star if the family liked it, and if it was a no go, then I add a note. I'm up to 3 weeks, and I was a little surprised at how many stars and NOPE's I have on that list. I'm going to keep that going for another couple of weeks, then organize that list. Right now I'm working on restaurant copy-cat meals; testing, and then adding those ingredients, if needed to the pantry. I want to have at least 5 or 6 "I don't feel like cooking" meals planned and ready to go- meaning they cook fast, and even though I'm in the kitchen, I am spending LESS time in there. I'm beginning to really appreciate my mini grocery store!

    I vacuumed sealed about 200 jars of dried pasta in 2017, That has been a lifesaver. then vacuumed sealed more,as i opened up my jars.My try mylar bags next time..i did score quarts jar, last year,from a senior,For 50 cents a jar .6.00 dollars per twelve & got 16 dozen.Paid $100.00. ball jars & kerr jars

    I have been working on my pantry. I need to increase the protein. I just bought a pressure canner and we got a dehydrator.
    My main goal now is to learn more scratch cooking and collect recipes for what we like to eat.
    No more boxed cake, muffin, biscuit mixes, etc.

    The good news is that we did not have the full economic collapse many feared and predicted in 2023. This gave us all betwen a few and 12 minths to prepare. Even those who lost thier jobs and are feeling the pain are doing better because the national economy made it through at least one more year.
    In June 2022, we radically changed the way we bought all things and managed our finances. Summarized we began to create an inflation fighting pantry and then larder. Key to this was to buy a quantity of items found at good to excellent prices; then eat from tje larder. This resulted in less variety in the beginning. The savings compared to today's standard sales and especially regular prices.

    Thank you for this video. I am trying to be ready. I don't do canning or those things. But I store what I can. Mostly canned grocery foods. Rice, sugar, etc. pantry Items. We never eat out, did all that in past times. Retired, living on social security and a small pension. Grateful I have a home, and share it with my family.       The Dow hit 37,000 for the first time this week, oil is down (so gas is down) to $71 a barrel because oil production in the US has hit record levels this week. Natural gas production will hit a record before the end of the year. Corporations are posting record profits, paying record dividends and buying back their own stock (which are now taxed thanks to the IRA), which is why prices have gone up. The economy is good, 'leadership' generally speaking are doing their jobs, and this is is how a Capitalist economy rolls.

    I appreciated your talk. I’ve been stocking up as much as I can since June. Once a week I grocery shop and always grab extra. My husband is kind of weirded out about my shopping practices. I’m not sure he understands what is going on. He lets me do my thing. I am also working on eliminating debt. We are so close. It will not be this year but hopefully a couple months into 2024. Thank you for your advice and your enthusiastic videos. We all need that.

      Listen to your voice. People thought I was nuts when I retreated from the social gathering that required mucho money to participate---- like eating out a lot and we did lots of things on groupon as activities. I stopped going to the chagrin of my friends and started putting everthing towards my house and got it paid off in two years when there was still 8 years on the note. I did that in December of 2013, got my mortgage release letter in Jan 2014 then found out my position was being eliminated in April of 2014. God puts things on our hearts for a reason. This year, I tried to go back to teaching, got Covid after one month, decided to resign, and found out two weeks after resigning that my insurance company would not renew my policy without a new roof. I live in a hurricane zone. I will not go without an insurance policy. Turns out that I made enough money in that month of teaching combined with what I was already saving, to buy a roof to get my new roof and pay my insurance for the year in one lump sum. Had i not been in the habit of saving, and had I not gone back to work, then I would've had to gone into debt. Listen to that little voice. It told me to go back to work, and when I got so sick with Covid, I did not understand why it had failed. It hadn't. I just did not see the bigger picture and no knowledge of the insurance noticed that came two weeks later. There is a reason for the feeling.....that voice that pushes you forward when no one else feels or hears it. It's called survival instinct.

    Got beef roasts and frozen veges today and will add them to other ingredients to turn them into cottage pies to can up this weekend. Then back to canning up more beef and chickens to build my pantry.

      @@loriflarson4236 found recipe similar to shepherds pie but something I can pressure can. I searched for meals in a jar and came across the cottage pie. Sheppard pie is made with mashed potatoes but Shepard pie uses diced potatoes along with peas and carrots. Like a stew and it could be a beef stew.
      I will process as quarts as my husband is from Wisconsin and loves Sheppard pie, but thinks cottage pie will be good too

    Leisa, I'm also an audiobook listener, I borrow audiobooks from our public library with an app on my phone (Libby). I live in a small town with a small library and I have thousands of audiobooks to choose from. Not challenging your intuition, but most planes are being parked because there's a shortage of parts to fix them and crews to fly them.

    Use your public library for entertainment! You've already paid for it.
    Lots of libraries have Kindle and audiobooks that you can borrow from home and many have interlibrary exchanges to increase your options. (No late fees EVER)

    Thank you so much! I have learned so much from you over the last 18 months or so and like you, I believe that you should always, always listen to your gut! I feel the same way you do - this is going to be the craziest year we've ever had (2024) so being prepared is essential. You were so calm but sometimes when I think about what is ahead of us, I lose my breath and get all panicked. No point in that - prepare for the worst - expect the best.     I was borderline diabetic after having my thyroid removed from thyroid cancer. I gained a lot of weight afterward. I went on keto and lost around 30lbs in two months, and my A1C dropped to normal levels. I wish you the best.     I pay our car insurance once a year to get discounts and our vehicles are older. Saving money. Our mortgage is paid for. We have to take our own garbage because of living rural to a processing center and recycling. Free. No water bill. We have a well. Retired and disabled. My husband retired this year. We have cut everything we can. Prepping and preparing 24/7. Buying can goods during sales. Thank you for your videos 😊😊

    I’m looking forward to Canuary. I started building our pantry in 2023 & I think I have 3 months of food so far….looking forward to learning more….Keep these kinds of videos coming Leisa…some of us are still learning. We even learned to raise & process 26 chickens this year…and have enjoyed eating them…looking forward to spring to start that process again since 1/2 of the chickens are gone already ( we share with our daughter’s family of 5). We also got hens this year… need to learn cost efficient feed ( like how to gather supplies for our own feed). Our garden this year will have more raise beds to save our aging backs. Garden ideas will also be helpful in case I have forgotten something. Thanks again…keep reminding us to keep on preparing

    I had a big pantry, etc., years before I had heard the term 'prepper'. Parents were old when they had me, and had lived through the Great Depression. My father got to my hometown riding the rails. I've had a couple/three times when through no fault of my own (injuries) I couldn't go to work. Worker's Comp is a joke, and the reason I learned to be a freelance writer. Even if my knee is replaced, my wrist is in a sling, I can manage to type up an article. But those times also took my pantry to a new level, then came Dec. 2019...and I said, well that virus is coming here. By March I had enough food, feed, bedding, everything, to last until the end of July. My van or my truck was loaded down with each trip to town. Good talk Leisa!

    Leisa, my biggest issue is our electricity bill, just constantly increasing. I know we are SOOOO fortunate and along with it extremely grateful as we do not have a mortgage, and in our 50s thst is a fantastic thing. However I'm still having to manage food bills, meals for 4. I'm planning on going back to baking and making more snacks and cakes for our boys instead of buying them, teenagers with hollow legs. I'll be concentrating more on bulking out our meals to stretch them. I have lots of almond and coconut flour which I need to learn how to use, plus wholewheat bran which make wonderful muffins. You have me thinking which makes me ramble. Thanks and sorry for that.😊.

      I just did an energy eval with my local electric company. We were good on everything surprisingly. He did suggest a few things with windows, doors, curtains hottest part of day, etc. Our neighbor did one as well and they found leaks around the doors etc. Maybe get your local company to come and see if there are ways you can save?. Have more than 1 freezer? - Maybe downsize to just your frig one and can everything up and maintain it that way. I was tempted to get a freezer and then pinched myself and said no. Store some meat etc in freezer but can everything. I actually am finding it works out great to do it this way.

      @@lantanalane3953 we are always better off in the winter as we have access to wood; we have a wood burner on the living room and use a wood burning Rayburn which heats the water, we have an emersion in the summer, we cook on it and it warms the few radiators we have. We have a gas bottle range cooker we mainly use in the summer, we'revery rural. Our main expense I guess IS the white goods, lighting and general appliances. I long for October when we light the Rayburn.🤣
