Some tips to get the Cuban coffee just right. 1. Keep an eye on the pot because you want to use the first few drops of coffee that comes out. These are thicker and will help making the espumita. 2. Add VERY little at first and slowly add more as needed. Continuously stir and whip mixture vigorously until thick. Remember you can add more but not take away. 3. You want the mixture to be a pale brown color and the texture should be thick. When you lift the spoon, the espumita should fall off the spoon leaving a ribbon. Once desired texture achieved, pour in coffee while stirring until all the sugar is dissolved.

i work at a latin owned coffee shop and we brew cafe de olla (sort of) as our drip coffee! the way we do it is we just add dark brown sugar and cinnamon to the basket with the coffee grounds. good quality, fresh ground coffee is key!

Little tip from a Cuban who makes coffee on the little Italian cafetera, the more you pack the coffee into the metal tin, the stronger it’ll be. Also highly recommend using the first bit of coffee that comes out (most concentrated) to mix with whatever sweetener you use and then add it back into the rest of the coffee, works like a charm ❤
