You should try doing spanish cauliflower rice! Been the best version of cauliflower rice I’ve had. You toast it and add your tomato sauce and spices, yum

I think frozen broccoli would’ve worked too but didn’t she put it in the oven still frozen that’s why it looked steamed instead of roasted or she could’ve let it thawed out or microwave it to unfreeze it and squeezed the liquid out it probably would’ve worked frozen if that what she had on hand but yea fresh would’ve made it easier

Corn starch can be used in two ways. When you incorporate corn starch slurry into a liquid it then becomes a thicken agent.

The rice cooker, this might be my sign 🙈🙈🙈 I've been meaning to buy one since we moved but never did, and recently found myself trying to eat more at home and think i might need one now 😅 my fam is from peru tho so they usually just make it in a pot but the rice cooker seems more my style 😬😬😬😬🙈 good just b cooking tho! Just relaxing to listen and follow along. I've been meaning to watch that show too. I just wanna eat healthier too, coming from my fam tofu is NOT a thing but it's not too bad to cook with actually 😁🙏 cheers to us making changes for the year 😊❤️🥂
I love spaghetti squash spaghetti w/ horade sauce. For my sauce I hear some avocado on and add in a shallot and garlic. (The amount of garlic is up to you. I usually do 2tbsp cause I really like it) one you can smell I cooking I add in diced tomatoes. You can use cherry/grape tomatoes or vine tomatoes. At this point I sesión with salt, pepper, oregano, Italian seasoning, cumin, and chili powder, all to taste but the more the better. Once the tomatoes have almost fully cooked down I add in multi colored bell peppers. Cook spaghetti squash on 400-450 for about 35min ( before putting them in the oven face down cut it in half remove seeds and lightly brush with oil and a sparkle of salt
Veggie quesadillas are great you could replace the cheese with plant based cheese to make it vegan. I use black beans, corn/fire roasted corn, rotel tomatoes and cheese with a some cumin and salt and pepper.
That looks good Glory, I myself wouldn't eat tofu. My husband and I actually started our new year on the opposite end. We've been doing the carnivore diet since the 3rd and are feeling great and I've already lost 8 lbs, granted that's probably mostly water weight but I'll take what I can get.
watching you stir and stir the slurry sauce that was only supposed to come to a boil for 30-60 seconds and then be removed was giving me anxiety lolll but great job!!! Also, just an idea but i think you had mentioned you had an air fryer. That would be amazing to crisp the frozen broccoli in 5 min and youd be able to toss the tofu in there as well. But I totally understand how one wouldnt improvise when following a recipe for the first time. edited to explain cornstarch: Its used together with water to create a slurry that is then added to a sauce to thicken the sauce if its too runny. But if it keeps boiling then it makes it too thick...if that makes sense. Its sensitive like that

Try roasted carrots cheaper than broccoli and makes a bunch chop them not too thick so they cook faster lol put olive oil, pepper,garlic salt pop into oven for 350 and bam delish !
Im not vegan or vegetarian but we will make mostly vegan meals from time to time i say mostly cause i love cheese and use dairy products, and my husbands allergic to tree nuts. so its more vegetarian i guess but its great cause its definitely healthier, i dont have to thaw anything and my 7 yr old eats it so yay!
Glory, realistically if you're family is going to focus on "eating more clean" the last thing you should be doing is shopping at Aldi. There's no starting slow or taking baby steps. If you want to actually eat clean, you have to buy all your produce from farmers markets, nothing pre-packaged and once spring starts, begin growing crops. Any meat you buy, you buy from a farmer directly. Continuing to shop at Aldi or any supermarket is counter-intuitive and defeats the purpose of wanting to eat clean. You have to sacrifice the idea of saving money and actually concern yourself with eating clean and healthy

Cornstarch helps thicken the sauce it like flour but cornstarch better because it don’t leave lumps in your sauce 😊

the reason your broccoli wouldn't roast is because it was steamed prior. Says on the bag. Happened to me before that's how I found out 😂 fresh 😅
