31. Five Easy Food Swaps for Better Health

    I went on a bread mission and ended up down a rabbit hole. I switched to milling my own flour. I learned that often people are thinking they are allergic to gluten when it’s only an intolerance. And there is a huge difference. It has been found that the reason people are often unable to eat store bought processed breads are because of how they are breaking down the wheat. Wheat berries are made of 3 layers. The bran, germ and endosperm. They began removing the bran and germ in order to get breads to last longer on the shelves. Through the years they have broken it down even further in order to not only get it shelf stable, but to handle the long distances of shipping on top of it. The bran is then sold to farmers for the cows to eat, so more profit for them. Because the bran is removed, people find it difficult to process gluten because the bran was designed to break down the gluten in our system. So without the bran to aide in breaking down gluten, we are finding more people bring gluten intolerant. These people can usually go to other countries and eat their bread products without issue. This is because other countries are not stripping the wheat of the bran and germ. It’s also why you find people in other countries purchasing bread products daily. Their breads don’t last forever on the shelves because they are not processed to do so. They have found that people who are gluten intolerant that start to mill their own flour are able to consume bread products without issue. Now, this is not the case 100% of the time. There are actual cases of gluten allergies. But when you research the difference, what they do to bread products, and milling your wheat, you’ll never go back to purchasing store bread again. Not to mention that fresh milled bread just tastes better. It also is nutrient rich because the nutrients haven’t been stripped from the flour. Sourdough is another way to go for gluten issues. It for those who don’t want to keep up with a starter or don’t care for the flavor, freshly milling wheat berries is often the alternative they have been looking for. My ex husband’s grandmother used to rant that something was up with the flour. That breads didn’t taste the same, the texture was off and you didn’t get the fluff you used to get. We would laugh at her and chock it off to her being half senile. However, if she were alive today I would owe her an apology because she was correct. Her intuition was spot on. They were destroying the wheat in order to make money with little concern for how it would affect people and their health. This bread journey led me down the path of changing everything about the way I looked at food and cooked. My husband has been able to get off many of his meds, including blood pressure and cholesterol just from me altering the way I cook. And he is on a lower dose of diabetes insulin as a result as well. Food is definitely medicine. And by making these swaps you have discussed, you can change your health and wellness for the better. People should do the research and discover how what they put in our foods are actually banned in other countries bc of the health implications as well as how many of the dyes and preservatives are the direct cause of many childhood issues such as ADHD, some autism cases, and many more issues we are throwing big pharma at.

      I think the difference in American and European flour(since their flour has the bran removed as well) is that a lot of American farmers(not all) use glyphosate to “ripen” their grain at the same time, so it’s easier and more productive for them to harvest. European countries don’t allow the pesticides we have here. My daughter is sensitive to the nonorganic flour/bread here in the US, but she doesn’t have a problem with the bread/flour in Europe. She uses organic flour when she’s here.

    Our family prefers Avocado oil. Olive oil has too strong a flavor. Good swaps.

    Hi Cami what kind of flour mill do you have and where would you suggest buying one? Thank you for all the great information. I did not realize all the oils were so unhealthy. We are switching to butter instead of margarine and other healthier things as well. I just learned about an app that I have downloaded on my phone called Yuka… it is helpful when you go to buy something at the store. All you do is scan the barcode and it will tell you if it is bad, good or excellent. The one I use also will do cosmetics as well. We make most of our meals from scratch and have a large garden, and we feel much better eating our fresh vegetables . My husband hunts and we eat deer meat which I would think would be healthy. What is your thought on wild game? All the best to you and your family.

    About food: It's very sad that most farm animals are on factory farms where the animals are treated with such cruelty. The factory farm industry tries to hide the truth from the public. Sadly, this includes eggs and milk that come from factory farms.

    Thank you very much! I know people feel "health food" is too expensive because let's face it even the items at the grocer cost a lot more these days...but I find that it's less expensive to make these better choices than the hospital/doctor bills will be when it all catches up in their bodily functions. Most people don't realize that the FDA is one that is responsible for the FOODS and DRUGS ((they are combined in more ways than just being an administration)). Another point concerns the consumption of meat. In bible times, God's people usually only ate meat for Festivals and special occasions (a few times a year), it was cut and cooked in the same day since refrigeration/preservation was an issue. Plus, each person enjoyed only about 5 oz (that's about the size and thickness of the palm of an average sized man). Fascinating to think about in this world where you can order everything "oversized".

      Real, healthy food provides satiety. Processed food, while cheaper, in the end is more expensive because the body doesn't achieve fullness, which causes overeating and spending more money on food.

      I only mill what I need…then there is no need to store it. The wheat berries can last almost forever before they are milled.
