    So glad to see you feeling amazing and looking like your pre-surgery self! I only ever cook my corned beef the Italian way ( with carrot, potato, artichoke hearts and cooked slow in tomato pasata rather than water) so last year when i canned corned beef i trimmed the meat of all fat, soaked it and then canned it with potatoes and carrot, onion, garlic and in tomato juice (rather than water) with some chili, Italian seasoning, garlic powder, onion powder...it was delicious over the winter!

    I checked my market today and they haven't marked down what they had on sale for St Patrick's day. As soon as they do and if I can catch the sale, I'll give this a try.

    March and going to try your par boiled method. Raw pack was way to salty.
    Update: I did a close trim of fat, parboiled the pieces on the first run. Second run I cut larger chunks then cut to size for jars. Third run, parboiled the entire corned beef, easy to trim fat and cut nice slices for sandwiches - a lot less work, packed in jars nicely.

    I started canning corn beef back in 2014. I also like to chunk my meat and toss with potatoes and onions for a yummy hash.

    I won't buy corned beef if the spices aren't in a little pkgs. I like to rinse mine off before I cook it to get that salty slime off of it. Last year after St Paddy's day the corned beef was marked down to 99 cents a #. I bought 3 & canned them. I love to pop one open during the summer & make dinner with it. WE're going to town tomorrow I'm hoping I can find some on sale again this year.

    I never even considered canning corned beef! I had such a hard time finding corned beef this year. Apparently it’s not a big thing here in south TX… you should have seen some of the looks I got from grocery store employees when asking if they had fresh, not canned, corned beef 😂
    Needless to say, when I found a store that carried them- I bought 4 roasts. I’ll definitely try canning one!

      It's very easy to brine your own, so much better than the store-bought.

      @@lisajacobson4818 I wanted to try that too! But could not find a brisket smaller than 40 pounds! That being said, had I known I could can it, I probably would have gotten the big one!

    Not sure if doing it right but the way I've done it is rinse meat, soak in water an hour,, rinse again then cold pack . Then pressure can my pints 75 minutes. Thank you for this new idea.

    I love corned beef especially in Reuben form. I'm interested in knowing whether par cooking and changing water makes it less salty. As long as it doesn't change the flavor much, I'm in!!!

    Science question. Do you think having the higher salt content in the pressure canned jars will help keep the meat from being tainted with Botulism?

    Can anyone drop a recipe with sauerkraut or do I need to shred cabbage myself and can that with the corned beef? I'm trying to can it for corned beef sandwiches

      You sure can just make sure you do t pack it too tight , have it brothy so heat and pressure can penetrate! And use meat processing time.

    Hello! Tyfs this video. Being that this cut is beef brisket... if I don't add the pickling spice, will it taste like regular canned beef brisket?

    Hey all, I’ve heard you can’t pressure can corn beef, because of it being corned? Thoughts on this please

      It has NOT been tested, The USDA thinks the curing process make it tougher for heat to go through and heat up the meat safely. Again, they have NOT tested this theory. If you don't feel safe canning it, don't! But this is my kitchen and I cut them smaller and leave room for the jar to heat up and I feel safe doing so. I hope this was more of a question and not YOU trying to strike up a discussion / argument in my comments! As arguments are unwelcome here!

    I want to try this, however I couldn't see how much meat you were putting in the jar. From overhead it looked like it was just half a jar of meat maybe a little more. Could you please clarify that for me?

      Half meat half broth. You can put up to 3/4 full of meat but par cooked meat needs broth and room to move.

    Why did you fill your jars only half full of meat? When I do canned beef, I push my meat down in the jars. With no water and pressure canner for an hour and 30 minutes.

      Yes for raw pack!! I hot packed it! Par cooked meat needs broth and the rule is half solids half broth for safe canning!!!

      You sure can! You will need to water down the bbq sauce so it isn't so thick.
