    Serves 2-4 People
    Ingredients -
    500g (1.1lbs) - Cauliflower, Cut Into Florets
    700g (1.5lbs) - Potatoes, Washed, Peeled & Diced
    1 1/2 tsp (3.5g) - Whole Cumin Seeds
    1 - Large Brown (Yellow) Onion, Sliced or Diced
    3 - Garlic Cloves, Minced
    10g (0.3oz) - Ginger, Minced
    2 - Large Tomatoes, Diced
    1 - Green Chilli, Split (Optional)
    1 tsp (2g) - Ground Turmeric
    1 tsp (2g) - Ground Red Chilli (Optional)
    1/2 tsp (1g) - Ground Coriander
    3/4 tsp (1.5g) - Ground Cumin
    3/4 tsp (1.5g) - Ground Garam Masala
    1 1/2 tsp (7.5g) - Sea Salt Flakes (Season To Taste)
    1/2 - Lemon, Juice
    20g (o.7oz) - Fresh Coriander (Cilantro), Roughly Chopped
    Storage Instructions -
    This can be stored in the fridge for up to 5 days and it can also be frozen for up to 6 months.
    Reheating Instructions -
    Fresh - Place the aloo gobi into a pan or pot and heat over medium heat for 10 minutes, stirring frequently. It can also be microwaved in short bursts, stirring regularly.
    Frozen - Once fully defrosted, follow the same instructions as above.
    Serving Ideas -
    Serve with naan bread, basmati rice, roti, parantha, and raita.
    This aloo gobi is also a fantastic side to most curries.

    im Indian and here's me telling you that this is a pretty authentic recipe! one little suggestion, add ginger after tomatoes. this preserves the ginger flavour better. also, you might wanna add a tiny bit of asfoedita or hing. this is slightly debated on when it comes to dishes with onion in it, but tastes great nonetheless. also, add a pinch of salt to ghee to avoid anything from sticking to the bottom of the pan, it turns any utensil non stick. lots of love and light to you. love your channel. so much positivity!

    Didn't expect this. Love this recipe. If you ever find ' Ammchur' which is dried Raw mango powder. You can use this instead of the lemon, you won't be disappointed. I love your recipes ❤️

    Not that you asked but this the recipe I’ve been using. Looking forward to try your version.
    Roasted Aloo Gobi (Potatoes and Cauliflower)
    4 servings
    INGREDIENTS
    * 2 medium russet potatoes, cut into 2"-long sticks
    * 1 medium head of cauliflower, cut into small florets
    * 5 Tbsp. extra-virgin olive oil, divided
    * 1 tsp. cumin seeds
    * ½ tsp. ground turmeric
    * 1 small onion, finely chopped
    * 1 Tbsp. thinly sliced ginger
    * Pinch of asafetida (optional, but really great)
    * Pinch of red chili powder
    * 1 tsp. (or more) kosher salt
    * 1 Tbsp. (or more) fresh lime juice
    * ½ cup chopped cilantro leaves with tender stems
    RECIPE PREPARATION
    * Preheat oven to 400°. Line a rimmed baking sheet with foil. Toss potatoes and cauliflower with 3 Tbsp. oil on prepared sheet. Spread in an even layer and roast, tossing once halfway through, until cauliflower and potatoes are browned and slightly crisped, about 30 minutes. Let cool.

    * Meanwhile, heat remaining 2 Tbsp. oil in a large skillet over medium-high until it begins to shimmer. Add cumin and cook, stirring frequently, until they turn a medium shade of brown, about 1 minute. Reduce heat to medium and swirl in turmeric. Add onion and cook, stirring frequently, until translucent, 4-6 minutes. Add ginger, asafetida (if using), and chili powder and cook, stirring, until heated through and well combined, about 1 minute longer.
    * Stir in roasted potatoes and cauliflower, including any charred bits from the foil, and gently mix (don’t overmix, or the cauliflower will fall apart). Add salt and cook, tossing occasionally, until potatoes and cauliflower are tender (but not soggy!), 5-6 minutes. Remove from heat and add lime juice. Taste and add more lime juice or salt, if needed.

    * Transfer potatoes and cauliflower to a platter. Top with cilantro.

    Aloo Gobi whwn used as a main dish can also be eating along with an Indian Roti where you can wrap the dish with a bit of torn piece of roti, creating a delicious morsel. (Also, you could apply a dab of ghee to one side of the roti and spread it thin.

    i tend to do a similar one with califlower and potatoes....heated mustard oil with added Panch phoron till the seeds make noise and then add the potato and cauliflower...mix well under light heat..add a smidge of water and cook on low heat for 15-20mins..with lid on..and let cool, and box up in the fridge for a handly snack when it need it :P

    This is very timely given I had mentioned this potato curry to my mum a couple of days ago. Potatoe and broccoli for me though as I’m not much a fan of cauliflower.

    I make this on the regular - great food! I use a liitle more fat, onion and tomato than the video calls for but otherwise same

    nice video man, hope will get more indian rcepies
    if u want to avoid sticking of potatoes while frying them , u need to give them a wash after chopping them into byte size pieces. Yes it will drain away some of its nutrients but if u want to get perfectly fried potatoes then u can use this method

      They’re prefect for this dish. They’re not supposed to be falling apart you still want a slight bite
