How to make Seafood in a "Bag"

  • Well, we didn't put in a bag before spreading them onto the table but you get the idea!
    This video is a little different from the rest cause it is the first time I freehand! No tripod or gimbal was used!
    Here's a video of me and my friends enjoying a feast at one of my friend's place so I took the opportunity to film the process.
    Here's the recipe!
    Ingredients
    - Olive oil (2 tablespoon)
    - Garlic (4 cloves)
    - Yellow onion (1)
    - Lemongrass (3 sticks)
    - Tom yum paste (5-6 tablespoon)
    - Sambal chilli (3-4 tablespoon)
    - Seafood stock (1-1.2 litre- depending on how much seafood is there)
    - 3-4 crab
    - 1 kg prawn
    - 2kg clams
    - 2-3 pieces of squid
    - corn (2)
    - carrot (1-2)
    - sausages (6 pieces cut into bite-size)
    - Lime juice (2-3 tablespoon depending on how sour you want)
    - coriander (garnishing)
    1. Pre-boil crabs, prawns, clams and squids individually for around 15 to 20 minutes or 90% cooked.
    2. Steamed the carrot and corn until carrots are soft or around 20 minutes
    3. Pan fry bratwurst sausage till cooked
    4. Heat pan, add oil and stir fry garlic, yellow onions, lemongrass.
    5. Add in tom yum paste, sambal paste and the seafood stock from boiling the seafood earlier and mix.
    6. Add in crabs, prawns, clams, corns, carrots, squids and stir fry.
    7. Cover and simmer it for a few minutes
    8. Add in bratwurst sausage
    9. Add in lime juice and mix well.
    10. Garnish with coriander and enjoy!
