I'd reccomend next time boiling down the watermelon juice into a concentrate so the flavor is much stronger. Then when you add it to the milk mixture it should not curdle in the Blender and have a much better flavor
From a chef to everyone here. There is a syrup brand called Monin, and they make all kinds of great syrups, including Watermelon. Add more milk, condensed milk etc, and add a food amount of this watermelon syrup. This way you can still make that good watermelon kulfi without separation
i’ve seen you make other kulfi with acidic ingredients so maybe it’s the amount of water in the fruit? maybe try reducing the watermelon juice into a syrup so it doesn’t turn out as frosty and you get a more intense watermelon flavor
I would agree if autofill is balanced. Got a game where i was the only one that didn't get autofilled and the rest were autofillers and we lost mostly beause of that. opponent didnt even have 1 autofiller. Rito need to either balance autofill or remove it and make the queue time longer... Or add a 3rd role for each players.
the natural citric acidic minerals of watermelon had a reaction with milk. It turned into curds, next time use any other milk but not whole milk. Almond milk will be best. whole milk is not a good combo with watermelon.

Probably you should have used the pulp rather than the liquid, since watermelon is like 92% just water. Either that or simmer the watermelon juice so that it evaporates the water without affecting the flavor.
The reason why it turned orange, it's because the red watermelon juice mixed with the yellow milk powder and the condensed and red mixed with yellow is orange!
If you dehydrate your watermelon and then pulse that into a powder it will turn out much more better because it take the water out which makes it a sorbet and it also makes the flavour intensify
You probably over mixed the kulfi mixture because it has heavy cream which when whipped it turns into whip cream however if your over whip it the fats separate from the water turning into butter

The separation was caused by the blender churning the cream in to butter, not the watermelon curdling the milk.
