The same thought came to my mind when I was watching an episode of Australian Masterchef last night. Jamie is worshipped like a god here, at least by the contestants and being a judge here, he struts around like a peacock... slightly condescending and those worshippers don't even notice it. I don't like either - Jamie or Gordon and NEVER use any of their recipes, but Gordon does not have the arrogance that Jamie has.

Why not? Uncle Roger is one of the most recognisable names in the cooking world who is not a chef himself. Chef Ramsay would be insane to not use their connection to promote his book.

Chef James, I love Your kind, positive energy! Uncle Gordon gave those 2 hexclad pans to Uncle Roger as a gift. Uncle Roger freaked out when Gordon used a metal utensil in the pan during a reaction. Gordon wanted to prove that He was not damaging anything! Keep up the great work Chef!
Good thing to mention. If you are going to use wooden skewers it's a good idea to soak them for a bit in water so they don't burn when deep frying the fish.

"When in doubt, chuck it out." This is a motto I live by! In fact, I'm probably over cautious, I won't even use meat on the last day of its "use by" date. I have Crohn's Disease and get sick enough as it is and I'm not going to do it to myself! Also, the dish Uncle Roger cooked is very healthy, the only part that gives me concern is his use of seed oil; peanut oil, avocado oil and ghee are healthy options as is olive oil (though I wouldn't deep fry with olive oil because it's too delicate nor ghee, because it's very expensive). Thanks for the video, Chef. I haven't dropped in for a while and it's so nice to see how much your channel has grown and how confident you've become as a host.
I love those little mottos that are helpful in the kitchen. Reminds me of a Gordon Ramsey one about knowing when something is properly cooked - "When it's brown it's cooked - when it's black it's f*****" 🤣

Protein doesn't suck oil in it like many other things that you deep fry. You just think that it is unhealthy because it is deep fried. If you sear a steak or deep fry a steak it doesn't make any difference. The oil is just on the surface. A Chef from Finland here. Great video.
That's interesting. I just wonder what else, apart from protein and potato chips people would deep fry... I've heard of Dixies even deep frying butter but I can't see the butter soak up oil during the deep frying process

One of my greatest achievements is not getting burnt by oil while I was working with a ca. 40 l fryer (tho both of my arms were purple from the pizzashovel) xd
Re: deep frying, a tip from a British chef (Anthony someone maybe?) ages ago was never fill your pan more than 1/3 by volume with oil. He claimed that oil can't do more than double its volume so you know it will never boil over because at most it will be 2/3rds full. That's worked for me so far. (Remember with something like a wok the volume increases as you get closer to the lip, so you'd need to calculate the actual *volume* of the wok, not just guess based on depth like you can in a straight sided sauce pan.)
Suggestion for future video(s): How about something from Korean Englishman or Jolly? They go through everything from street cooking to visits to Michelin-starred restaurants of all different ethnic bases. Josh and Ollie star in both, and Josh is married to Gabbi, who is an excellent chef herself and sometimes features in their videos, as well as having her own cooking channel.

haha I have a few more as well, it helps to put dates on the food too. My mother in-law also has Crohn's and it is not easy cooking for her

Protein doesn't suck oil in it like many other things that you deep fry. You just think that it is unhealthy because it is deep fried. If you sear a steak or deep fry a steak it doesn't make any difference. The oil is just on the surface. A Chef from Finland here. Great video.
That's interesting. I just wonder what else, apart from protein and potato chips people would deep fry... I've heard of Dixies even deep frying butter but I can't see the butter soak up oil during the deep frying process

Re: deep frying, a tip from a British chef (Anthony someone maybe?) ages ago was never fill your pan more than 1/3 by volume with oil. He claimed that oil can't do more than double its volume so you know it will never boil over because at most it will be 2/3rds full. That's worked for me so far.
(Remember with something like a wok the volume increases as you get closer to the lip, so you'd need to calculate the actual *volume* of the wok, not just guess based on depth like you can in a straight sided sauce pan.)
If Uncle Roger & Jamie Oliver have a head-to-head cook off you should be the referee and judge!
Suggestion for future video(s): How about something from Korean Englishman or Jolly? They go through everything from street cooking to visits to Michelin-starred restaurants of all different ethnic bases. Josh and Ollie star in both, and Josh is married to Gabbi, who is an excellent chef herself and sometimes features in their videos, as well as having her own cooking channel.
