  • We already made Krupuk Prawn Crackers from scratch - this time, we use the same technique to turn Döner Kebab, Sushi and a Cheeseburger & French Fries Combo into crispy rice crackers.

    200g anything - protein and low moisture food works best
    200g long grain rice
    150g tapioka starch
    water*
    * Add water until paste is wet, sticky and homogenous! Around 100-200ml probably, but it really depends on your "anything".

    So this was a little experiment! As you guys can see, this doesn't always work perfectly. I wonder what the chemistry behind it is. My theory is that fat decreases the puff effect. Döner and the burger were both very fatty, the sushi not so much. Let me know what you think - maybe we can figure out how to do this right!

      I think the sushi crackers worked the best because they already had some cooked rice in them so maybe a higher ratio of rice to food stuff. You’ve probably already thought of this but keep it up!

      I think if you make crackers from the basic ingredients of the burger (raw meat, tomatoes, etc.), it will give a better result.
      Just use the basic ingredients without cooking them
      do not use bread

      Starting from component ingredients instead of "finished" products is probably going to be key. Controlling fat will definitely affect the "puffing" experience.

    Your starch composition is on the low side. That's why the sushi expand better (because it have additional rice). Basmati rice is not suitable for kerupuk, try fluffier or stickier type of rice.

    You lost your own chemical breakdown my friend you used more then 50% of the meals but what puffs there is the starch so if you use to much ingredients the buffing reduces and on top these meals have a lot of fat in it. Fat encapsulates the starch and keeps it from forming a structure on cooling but the structure is keeping the water in in the first place. At least that's what I learned. So maybe less ingredients more starch next time since you don't have to overload the taste this much ;)

      erinas I think that If he blended the food into a paste and then dehydrated it followed by blending it into a powder it could’ve worked. Like he could have weighed the powder so to achieve the 50%

      @@LMvdB02 Keep in mind the texture wasn't the only thing wrong with the döner crackers. The flavour was also not right, judging by Andong's thoughts on it. So probably best to go with both of what you suggested: A starchier rice, more of it, and only using the meat from the döner, or possibly using the entire döner, just without the bread.

    I have my shrimp crackers drying on a rack as I type this very excited... I used a chopstick to help form the rolls and tied super tight with butcher twine, I got a very uniform tube shape. Thanks for the recipe I’m super excited to experiment further

      Max Heubeck Soooo first batch was a fail lol. The chips looked good, I tried to cut as thin and uniform as I could. For whatever reason, 0% expansion when in the oil, I think this is due to the rice as I can see some rice shape still present in the dried cracker. I’m gonna try again with my rice being a little more over cooked and cutting a little thicker hopefully that resolves the issue. Maybe even try a dehydrator

      - Cracker defrittieren, also das Öl rauslutschen
      - anfeuchten statt trocknen
      - warm werden lassen
      - Püree in einer Salatschleuder trennen in die Ausgangsbestandteile
      - et voilà, fertige Mahlzeit

    your dough after steaming is too sticky and wet, hence not as cleanly and thinly cut as traditional krupuk. traditional krupuk is a bit dried, dense, and gelatinized homogeneously before cutting, therefore, it will expand more and crispier when fried. traditionally we used 'bleng' a.k.a. borax in rice-based krupuk, but since it was not safe some prefer STPP/E451 as the substitute. krupuk's texture is the main fixture. if you got it right then you could play with the taste and seasoning.

    Andong, I do believe that the sushi Krupuk was more successful because it's made mainly of the original sushi ingredients. Fish, pickled ginger and seaweed pair well with rice which as you know is pretty much all starch. Sushi is a perfect food in my opinion. All the components complement each other perfectly. The added rice and starch are super bland fillers so in order to get them to taste like the doner and cheeseburger, you would probably need to add more of those actual flavors to the processed mix, maybe in the form of the seasonings they utilize. Fish has a lot of oil which is difficult to hide and starch is thirsty for either water or oil. I think that's the reason some people don't like fish. I didn't comment on the shrimp Krupuk video you made because I'm super allergic to crustaceans and didn't want to "rain on your parade". That video however had me beaming from ear to ear when you were able to duplicate it and the look of success on your face...so stinken cute!!! I was so proud of you! Oh, and speaking of the flavored potato chips, Lay's actually makes them. They had made a cheeseburger flavored potato chip but it didn't do well so they quickly dropped it. I'm quite sure just like all their other flavors, since they're just fried thinly sliced potatoes, they add the flavoring to the chip after they're cooked, not like Doritos which are ground corn to which they can actually mix in flavors including sprinkling more on top of the finished product.     There are burger flavored chips! They taste similar to a McDonalds quarter pounder with cheese. They are pretty good but a bit much for potato chips.

    You mentioned the sushi one took the longest to dry, yet it seems like all other ones were still in the dehydrator.
    It kinda sounds to me that while you were waiting for the sushi one to dry, which was the only one that puffed up as it was stopped from drying in time, the other ones overdried.
    That might be the problem here.

      @@arpioisme according to the generally accepted explanation of how they work, they have a remaining, very small amount of water content deep inside which upon rapid expansion in extreme heat causes the starches to puff up. If gently heated for an extended period of time this small amount of moisture can pass through the starches and evaporate just as the rest of the water content does during initial drying.

    Interesting!
    My theory is that we should consider preserving the space between each ingredient... Since the crackers didn't blossom when fried, the result was so compact that only the surimi was the closest result to what was originally mixed with rice. Since the tastes are so diverse, one should expect a lighter taste but with all the full spectrum....

    I love chips with pizza taste! So it's not that of a weird idea, just it should be tackled probably in a different manner. Maybe you should of tried dehydrating the blended foods and used it as a seasoning on the chips? The rice ratio was definitely off on the burger and kebab, which is prob. why the sushi one worked out better (texture wise). Other than that - really interesting.

    Ofc sushi will work, it basically fish and rice. Indonesian krupuk also made with fish with tapioca starch and garlic, mackerel fish is more common for cracker ingredient.
