I followed your instructions today, with much trepidation, and my wife said they were as close as she's tasted. Thanks for the inspiration and passing of the tradition.

If any one needs her recept here it is. She use to have a website with it. Thank god I kept it. Servings 18 to 24 3 lb Idaho potatoes. 2 lb yellow onions. 3 eggs 1/2 cup flower 1/4 tsp Baking Powder 2 tsp salt 1/2 tsp black pepper High heat resistance vegetable oil Preparation Peel potatoes and cut up for shredding in food processor. Squeeze out excess liquid from shredded potatoes. Do the same with the onions. Put shredded potatoes and onions back into food processor and mix well. Pour mixture into large mixing bowl. Add eggs, flour, salt, and pepper. Mix well and set aside. In large skillet, heat enough vegetable oil to fry latkes. When oil is hot, drop large heaping spoonfuls of potato mixture into pan and fry until golden brown on each side. Drain latkes on paper towel to absorb excess oil. Makes approximately 18-24 latkes.
I absolutely love your potato latkes. WARNING EVERYONE! There is a big problem I found with these. I drink beer with them and I just can't stop eating them. After about ten of the latkes, my belly feels like there is a big rock in it just sitting there. No matter how much exercise I get going back to the fridge for another cold brew, same feeling. At least I will die with a contented smile.

All my mom's relatives were from Sicilly. Another girlfriend who was Jewish, showed me how to make Latkes in 1980. This video is a good memory refresher!

My daughter recommends that I take cooking lessons from you, Bubbe! So, I agree your lessons helped me a lot. I never have strained mine to get the liquid out and I also don’t add flour! So, thank you so much Bubbe for teaching me how to make a better latke! Mine were more like hash browns!

We do have exactly the same dish in Lithuania, its just called bulviniai blynai( or just blynai) and usually we eat them with sour cream. Same with kugelis

I'm sorry, folks, but I'm compelled to point out that this recipe does NOT show what she actually did to create these latkes. Notice the bowl on the viewer's right at 1:50. Those are not blitzed potatoes, they are shredded potatoes, which you can see more clearly as she mixes everything at 2:29. Was this what she meant by "I always leave out some of the potatoes"? Was there a filmed sequence of the shredding that was missed in post-production?
That’s how it comes out if you grate the potatoes by hand which was how I learned. I never used a food processor for this. The bubbe’s hands look arthritic which is probably why she is forced to use the processor.
