Good suggestion to add red lentils, I will follow this with using red paprika instead of green, then add some chopped fresh coriander, lemon juice and a bit of chili pepper. And perhaps bake it in the oven without panko. I guess that will turn it into a baked samosa!

I have some suggestions for you. I worked in a German bakery. I can speak Japanese but not well enough to explain it in Japanese: Dough-Better way of mixing ingredients: 1. Option: add all the dry ingredients, mix them , and then add water. 2. Option (better) : Mix ingredients as above but add salt AFTER the dough has risen. Yeast doesnt like salt. And a good tasty dough needs time to rise. Also, always let the dough rest for 10 minutes, just after combining the ingredients BEFOR kneading the dough. Its called protolyse. The glutein does its job all by itself. Youll see the result is much better. Another idea: Add some minched apple (sweetness/sour) to the currymix. The pektin will thicken the mixture and you dont need the flour. For a better savory dish use coconut oil or palm oil instead of oliveoil. Its not as healthy, but its not a healthy dish anyways. でわ、どうぞ。試してください。
M. .M 1. He actually doesn't need bread/dough that rises too much.. That would make the cover soft and spongy and that would end up absorbing lots of oil.. Just because you worked in a bakery does not mean, that you are the ultimate baking master.. Every bread needn't be baked in absolutely the same homogenous way to be appropriate for any particular dish.. Different dishes need different kinds of bread and variations in preparation of bread have to kept in mind to suit that particular dish.. 2. Adding minched apple would make the curry thick, no doubt.. But that is exactly what is not needed.. If the curry gets thick, the dish would taste dry.. It needs to be at a perfect consistency between dry and wet ( as made by him) to make sure that the dish neither tastes dry nor it is too wet.. 3. Healthy doesn't mean eating only loads of meat.. Meats are high on cholesterol and fat.. Cooking meat needs more fat.. Further altogether avoiding oil, like a uni-directional maniac, without any sense or understanding is no means of healthy eating.. Eating in right quantity, in tandem with one's daily requirement, certainly is.. Altogether avoiding oil also leads to deficiency in cholesterol, leading to large deficiency in Vitamin A and Vitamin D, as both need some amount of cholesterol and oil to be able to be absorbed by the body.. He made the dish perfectly, like a zen master.. But it seems that prejudiced to the extreme, as Germans are, you couldn't help appreciate his skill, but rather chose to scatter your limited narrow knowledge, where it isn't needed..
