Oh, about the music, I'd rather not turn it off. It seems to me that without music at all you will be bored watching or listening to my video. But maybe in a video of a different format, or a shorter episode, I won’t use music.

In this video I did not use datapacks, but only some single mods as "Fast Leaf Decay" and texture packs "Default-Style Fall Pack"
what about the different colored oak/faster dropping leaves i dont seem to get those with the sharders/resource packs you mentioned

"FastLeafDecay" is a mod that makes foliage fall quickly, and "Default-Style Fall Pack" is a resoursepack that changes the color of foliage. You can find both of these files on the "Curseforge" website
