- I have been recruited! Hurrah! Now every Friday I'll (hopefully) be posting a Dear... video. Tom and Carrie will then respond on Sundays and Wednesdays. We've no idea how/if this will work, but we're giving it a bash - I'm sure it'll be great fun.

I live in Little Rock, Arkansas USA and - sadly - was/is not much aware of McFly/Busted/Tom before watching your wedding video on Tom's channel. I fell in love with that video and now have fallen in love with you, Tom and Carrie! I never miss a video! Question - are there videos available of other parts of your wedding? Hi lovely Gi! That sponge looked lovely. Next time if you'd like thicker/non curdled 'buttercream', try using a vegetable fat called Trex. Also if you want to substitute butter in a sponge you can use Trex, just use 20% less. It's what we use at work! Love from Lauren the baker x p.s not sponsored by Trex!

Maybe you guys can do the series like dominoes! Spending the first half of the video responding to the previous one, and the second half addressing the next person. Like dominoes! :)
Chia seeds are a great substitute for eggs, Gi! I use one teaspoon of chia seeds (white chia looks better in cakes, less noticeable) to three tablespoons of water. It makes enough for about two eggs worth and works great.

Hey Gi, have you ever thought about using an egg substitute for vegan reasons? There's a powder you can buy which you just mix with water, and then you can use it in place of an egg when you're baking stuff like cake, but it's totally egg-free. My family used to use it when I was allergic to eggs. That cake looks great, btw :)

I have a baby brother that has an egg allergy and my other brother loves cake and it's horrible for my brother as he cant eat it so we use Apple sauce now. I know it sounds disgusting but instead of the eggy taste it tastes quite sweet and fluffy xx I hope this helps so you can eat cakes without egg xx
