I think "Cháo Canh" is a kind of porridge of many toppings inside like ribs, dry prawn,... and the brown colour made by dropping the pig blood in, "Bì" is the processed pig skin! ^ And you can try dipping many of those dishes in chilli sauce for better flavour next time!
That is one thing I love about Vietnamese food, is all the wrapping and dipping. 😋 I would have loved the first restaurant you guys went to. Everything looked amazing and I would have been smiling a lot eating there.

Spicy ramen or kimchi stew is a must

@tvhung83 sooo many speciality dishes, so glad we didn't decide to skip Thanh Hoa, it definitely amazed us 🤩

The pork wrapped in banana leaves (and another kind of leaf - guava leaf) is either tré or trưởi. Not normal nem chua.
