Healthy Delicious Toasted ORZO Salad

  • Try this super healthy recipe! Toasting the orzo till golden brown, before placing the liquid in, brings out the flavor then adding the tofu crunch and veggies makes this truly a winner. Try it as a side dish or the main meal.
    Recipe:
    1 Cup ORZO
    2 Tbsp Extra Virgin Olive Oil
    2 Cups of Veggie Broth (or chicken if you prefer)
    Cucumber
    Radish
    1/2 Can Chick Peas
    Tomato
    Tofu Crunch (see recipe link at the end of the video)
    Dressing: Drizzle Extra Virgin Olive Oil and add Balsamic Vinegar
    Place the EVOO in an iron or non stick skillet and add the orzo and heat till golden brown (about 5 minutes) then add the Broth and cook till all the liquid is absorbed (about 10 to 15 minutes)
    Place the orzo on a cookie sheet to cool
    Chop all the veggies and salad and add to a bowl
    Add a couple handfuls of Tofu Crunch (video link at end of this video)
    Add the Orzo and drizzle with EVOO and Balsamic Vinegar

    ive been making curried peas and garbonzo beans with tomato paste, cumin etc over rice
    a lot..... a lot alot recently. gonna give this a go
