I personally take the chicken out of the season bowl piece by piece into the sugar/oil it gives a little darker seal on the meat as the water from the chicken and soy stop the quick fry seal that happens it just simmers. All the other steps are just how I do it so yummy. Xx

If I was making a shark broff (this way I don't have to worry about fish bones) should I Chonkay the cut up veggies in the oil and brown sugar? and then add the shark like half way done cook? thanks
+Vincent2wice I usually don't stew my veggies for broth/broff. I would suggest just chounkaying the veggies in the oil and then add the shark close to the end. Let me know how it turns out!
That's interesting that you stewed the chicken first. Is it to darken the meat? Because most times the chicken ends up white but yours seemed to have kept a bit of colour.

The meat will spring water and this should be allowed to dry down , then put some more water and let that boil down . I'm going to try this recipe , it looks good.

Brown sugar in soup don't seems right don't like it, when not feeling good less stuff in soups are better.
