You have to ask for sushi grade salmon. To decrease the risk of parasites if you do buy from the store and don’t get sushi grade, ask for farmer salmon. Less parasites.
_Spill_The_Tea_Sis _ I get Atlantic salmon from Walmart. Cut it up. Then mix salt and sugar in a bowl with some lukewarm water. Put them in there for 10 mins. Take it out. Put in on paper towels on a plate in layers to dry. Cover it with aluminum foil and freeze it for a week. Then put it in the fridge let it defrost slowly. Then it’s ready to eat
