    Boy , am I happy I came across your page. Ever have one of those days where it's all about timing, how things play out. I absolutely love Jamaican dishes, my mom is from Hanover and I love her cooking. This Christmas I am going to surprise her with one of your dishes , especially the carrot juice. Her birthday is that day too , so woohoo.. Trust in God , everything happens for a reason .       I agree. Kingfish is underrated but that's because people do it wrong and it's got a lot of bloodline and fishy. This lady's prep is the right way to get rid of the fishiness that turns people off of kingfish without destroying the fish trying to cut out the bloodlines. Filetting it is a disaster. Really fishy. Only good if you're making a smoked kingfish dip.

      People generally don't eat kingfish because if you filet it is got a big bloodline and it's really a strong fishy taste. Cutting it the way it is, into 1"thick steaks or medallions, reduces the fishiness. Also her soaking it in lemon and vinegar takes the blood out and makes it more neutral which I've never seen anyone do before but makes sense. That's the least bloody kingfish steaks I've seen ever, it's not even much around the spine anymore.
      And if you can get it to that it just needs salt and pepper after that and a bit of lemon and it's fine.
      I like the fishiness of kingfish but many dont. Her prep of it is masterful, and why her finished product only needs light seasoning.
      So what's Jamaican about it? She takes a strong tasting fish and makes it soft and comfortable to eat for most people, then she lightly seasons it to then kick it up a bit and it's great for everyone.
      It's not always about the spices and ingredients that makes the dish sometimes it's just about the preparation.
