    Buttery goodness and the salty savory taste of this Jamaica butter bean with artichoke saltfish substitute will have you coming back for more.
    VEGAN ARTICHOKE SALT-FISH REPLACEMENT
    INGREDIENTS:
    1 can (398 ml) Artichoke heart
    1 teaspoon salt
    1 tablespoon ground-up seaweed or nori flakes
    2 cups water
    DIRECTIONS:
    1. Drain liquid from artichoke and rinse, then roughly chopped.
    2. Add grounded-up seaweed, salt, and water. Soak for least 1 hour.
    JAMAICAN BUTTER BEAN AND VEGAN SUBSTITUTE RECIPE
    INGREDIENTS:
    4 cups butter bean (large Lima beans) or 2 cans
    1 packed cup of artichoke saltfish substitute
    1 onion, diced
    1/2 green bell pepper, diced
    1 small tomato, diced
    4 garlic cloves, minced
    2 green onion (scallion)
    3 sprig thyme
    3 tablespoon ketchup (optional)
    1 tablespoon oil
    pepper for taste
    DIRECTIONS:
    Washed and chopped vegetables.
    If using canned beans; drain and rinse beans.
    Heat oil in a skillet pot on medium heat. Add the chopped onion and garlic and saute for 1 minute.
    Add the Bell Peppers, Tomatoes, and Thyme to the skillet and saute for about 2 more minutes.
    Then stir in the Saltfish; cook for 2 minutes
    Add the Butter Beans, green onion (scallion), pepper, and Tomato Ketchup to the artichoke mixture.
    Stir together and cover the skillet, let simmer for 5 minutes.
    Serve it with your favorite side dish. ENJOY!
