    Hi, great vid and info!! Couple of questions if that’s ok? Do you have to sterilise jars and bottles? Can you use frozen fruit? Many thanks ❤

      No need to sterilise bottles, just wash in hot soapy water & rinse well. Yes frozen fruit is perfect, I usually defrost it and mash it up a bit to maximise the surface area, fizz & flavour. X

    Hi I have a black tea scoby and want to convert to green tea how do I do this please?

      I have never tried to convert a black tea to a green tea scoby! Wait until you have a spare then just transfer it to either 50/50 black/green tea mix then make the next batch all green tea! It can take a few brews to get it right but your new scoby which will grow on top should be acclimatised to green tea.

    Hi Janice, love the videos and so glad to have found a UK site. I'm new to Kombucha having made water kefir, milk kefir and veg ferments for some time. I need some clarification about storing surplus scobies if you wouldn't mind please. I understand they are left in the tea/sugar/water solution and I assume this will continue to ferment until all the 'food' has been used, and they will then go dormant. Are they then kept at room temperature or do they need to be refrigerated like the tibicos? It is unlikely that I will keep them very long as I have 3 lovely dogs who are more than happy to eat any ferments I make (and I make large quantities of fermented veggies specially for them). I'm looking forward to alternating water kefir and kombucha. Looking forward to your response.

      Hi Anthea, you can keep spare scobys for months, just in kombucha & occasionally add some sweetened green tea. Don't ever put scobys in the fridge, it changes the bacterial balance, making them more prone to mould when you use them! Delighted to hear your dogs enjoy your ferments! My chickens used to love scobys and kombucha! Our dogs have kefir but have never given them fermented veggies! 😃

      @@janice.nourishedbynature Thank you for your uber prompt reply! I feed my dogs raw and it seemed a logical next step to ferment their veggies. I also add dandelion leaves and nettle tops (with seeds). The texture and condition of their skin and coats is amazing and that is only the results that I can see. So much so that an increasing number of friends and neighbours have gone down the same route hoping to improve their pets' health. Please keep posting your videos, the information contained in them is invaluable.

      Thats great to hear Anthea! Probiotics are incredible for our pets as well as us! Dehydrated scobys make great treats for dogs!! Your dogs will be in tip top condition, inside and out!! 😃

    Thank you so much, I finally started making my green tea kombucha however I want to switch to Redbush to avoid caffeine/theine as much as possible. Would you say it is still the same ratio of teabags and sugar per L? Many thanks again

      Yes just the same, my daughter makes Redbush kombucha! You can use less teabags if you like but use the same amount of sugar. My daughter uses 5 teabags for 2 litres, and adds a couple of green tea bags once a month or so to give the scoby a wee boost.

      I wouldn't use all flavoured tea bags but using one or two along with some standard green tea gives a lovely flavour, without being overpowering. Green tea with mint, green tea with lemon & green tea with jasmine all work well. For a 4 litre batch I use 2 flavoured teabags & 10 green. If you have spare scobys then you can experiment with different teas. Some flavourings are detrimental to the scoby over time. Good luck! 😁

      Just make it the strength you would drink it. So probably a teaspoon per cup, so between 3 to 4 tsps per litre. 😁

    whats the difference between green tea kombucha and black tea kombucha?

      One is made with black tea & the other with green tea. They have different flavour profiles and different scobys for brewing. I prefer green tea, its a more delicate flavour and has more options for flavouring! It's personal preference but black tea kombucha has more tannins & is a more robust flavour. They all have benefits for our health. 😁

    Hi I have just brewed my first batch of green tea kombucha using a black tea scoby and starter tea. After you have made your green tea kombucha do you store your kombucha scoby in a separate hotel from the black tea scoby hotel? Hope this makes sense😊
    Also the bottle with the tap from IKEA is metal, I have read the metal reacts with the kombucha, what is your experience?

      I would store them separately. I brew green tea, hibiscus tea & Darjeeling kombucha & keep the scobys separate. The tap on the IKEA jar is not metal, it's coated plastic and it's fine for brewing kombucha. 😁

      I use white sugar, brown sugar can have too many minerals and negatively affect your scoby over time.

    Hi Janice. My first batch of kombucha was left for 7 days before I tasted it and it was actually like vinegar. Is this good enough to be starter tea for my next try. Thx in advance.

      Hi Deborah, sometimes it takes a couple of brews to get decent tasting kombucha. The yeast/bacteria balance can be off which can cause vinegary tasting kombucha. Are there any yeast strands or murky looking spent yeast at the bottom of your brew? Filtering your starter tea through a sieve will remove excess yeast. Give it another go and just throw the vinegary kombucha in your bath, its great for detoxifying the skin & increasing circulation! 😃

      Just strain the kombucha you have and use that for starter tea.
