Very lovely Chicken you have there. Back in here we called it Cemani with C as Chery. But in your home I believe you may called it with whatever kind of C that suits you it still be as lovely as it gets :)
I lived in Indonesia for 12 years... and just got 2 Cemani chicks a few months ago.. a rooster and a hen. Very pleased! I got them on hatching day... so didn't know what I had.. but had a hen and rooster. My rooster has golden flecks around his neck... and that is fine with me. I am not a breeder.. I keep them for pets.

Ayams caught my eye very early on and they seem to be a somewhat multiple-purpose bird though I'm not looking at them for meat. That aside if I need to cull an adult that's not ill or severely deformed would culling and utilizing the meat be a good step?
you should also selective breed for egg amount too. they only lay 80-100 a year. I've also heard expired yogurt bumps up egg production. (i dont think yogurt really can expire tho since it's technically spoiled milk anyhow)
With the lacing on that rosters feathers and the red in the comb I would say that may not be an ayam it might be an Kadaknath. But they do get inter breed from time to time, still a handsome young rooster.
I truly hope you have far better luck with your American Bresse experience through Bresse Farms. Mine was pretty terrible honestly. I highly doubt any of the ones I hatched are full blood American Bresse. One has feathers on the feet and legs. Lots of crooked toes. I called to inquire about the feather footed. They said that another breed of rooster got in the Bresse pen. They were "halting all AB hatching egg sales." Told me to cull the feather footed one. None of the roosters have white earlobes, all red. They said a maran roo got in the pen for sure. The black roosters look much like black copper marans. I feel I wasted money. Husband was pretty perturbed about the amount I spent for a dozen hatching eggs. He knew it took me awhile to save up for it. Would have been nice if they had offered to make the situation right.

I don't think yogurt can expire around here because it is so delicious that we eat it up lol
Well if the bacteria work for too long it becomes sour as hell, and anyways, once it starts to mold it's no good for food anyways.

I've had multiple roosters together before, but they can't be in too small of spots like that.
You can have more than one rooster lol I have several coops and in one of my coops I think there’s 3 roosters in there they do fine.
