I also have a whole series of cachaça cocktail videos as well and it's one of the things I focus the most on so I'm always looking to showcase more great cachaça cocktails! One of my favorites is the Regal Amburana.

It tastes to me like an old mexican library full of leather bound books. I think it'd be right up your alley.

I made 2 versions of the Batida with your recipe just now. These are the first cocktails I've ever made with Cachaca. The first one I made with 51 and the second with Novo Fogo Chameleon. I actually think that the 51 made this fabulous cocktail my preferred one. It adds banana flavors that the Novo Fogo is missing. But what a great (and even better) alternative for the Pina Colada which ever Cachaca you choose! Thanks for the recipe!
Funny you say that because this batida is like a creamy variation of the caipirinha, and depending who you ask, lots of Brazilians will tell you the cheaper the cachaca the better when it comes to a caipirinha. Using the aged ones almost make it a different drink

The Batida does not appeal but I will make a Lil Smokey tomorrow. Enjoying now a Cairn glass measure of Ardbeg whilst quietly having the football on. Hey Lui, you‘re the Man 🤩 I never really liked Cachaça because they make terrible Caipirinhas over here in Germany... they use brown Sugar and Pitú and that is something I don’t wanna mess around with^^ Anyways I got a bottle of „Espírito de Minas“ and that seems to be a very good one. I absolutely love it and made some Caipirinhas the other night. Now I got myself a Bottle of Cynar and can‘t wait to make a Rabo de Galo. ♥️ Much Love from 🇩🇪 Lui

Before knowing what is what (before watching your videos) I ordered a bottle of Cachaca 51. Is it any good or is it crap? Please be honest. I'll have to get an aged Cachaca one day as well, but for now: would you recommend or not recommend using Cachaca 51 for the Rabo De Galo and the Batida? Or should I just try them with some aged rum, which I have quite a few of... until I get an aged Cachaca? I'm new to your channel, but from what I've seen so far, I really like your style and the cocktails. Greetings from Finland!
So unfortunately here in the states our selection of Cachaça is limited. Very limited. I personally don't like 51 it tastes very processed and industrial. But for a lot of folks it's the only one available. In a cocktail it probably wouldn't be tooooo bad. In a rabo de galo and batida it might work okay because of the other flavors. As for.brand recommendations I'd recommend Germana, Novo Fogo, Ajornada, Abelha, or Avua

Can I add, from when I started cocktail making just over a year ago, I filled a notebook with recipes from mostly Leandro and Steve. But my favourite is called a Right Hand Twist. I saw it in a promotional spread on Rum in English Supermarket Waitrose weekly paper. Designed by a London bartender it is:- 40ml Kraken Rum. 25ml Campari 25 ml sweet vermouth 5ml PX sherry (Pedro Ximinex) Stir with ice. Strain over a rock in a double old fashioned. Orange peel oils expressed over then the orange peel goes in as garnish. Rich and beautiful flavour! Nick still washing up.
Damn I'm sorry that that's all you have access to. Pitu is not very good. I'm sure the cocktails may still taste alright but not as good as it would with a better cachaça

So I make a regular simple syrup on the stovetop and add like 8/10 cinnamon sticks to it, reduce the heat to a simmer and leave it for a half hour on low with an simple syrup extracting the flavor.

When you say cinnamon syrup, do you mean cinnamon simple syrup?
